We're awfully fond of the thymus around these parts as well. Here's a list of some of the tastiest sweetbread plates on fall menus:
Zahav - sweetbreads with pickled plums, crispy chickpeas and radish
Fond - crispy veal sweetbreads with sweet and sour eggplant and yogurt
Matyson - smoked veal sweetbreads with sunchoke, mushroom, miso and soft egg
Amis - almond dusted sweetbreads with fennel marmalade
Modo Mio - crispy veal sweetbreads with peas, almonds and pancetta
The Industry - sweetbreads with buffalo sauce, shaved celery, pickled vegetables and blue cheese
