In case you've been living under a rock, here are the specs: Justin Bogle is from Roxborough but has been cooking in New York, where he became the youngest chef to earn two Michelin stars during his tenure at Gilt. He's partnered with Chris Scarduzio to open modern American Avance in the old Le Bec. The storied address has been completely revamped--unlike the tepid re-do under LBF 2.0's Nic Fanucci--and now features a living green wall in lieu of gilded chandeliers.
Food and drinks specifics are scarce and best gleaned through the restaurant's Twitter: a living-edge walnut bar with a built-in glass rinser, serving vessels made from dehydrated tuna spines, a liquor collab with Hop Sing, a sweetbread dish with parsnip and fermented pumpkin jus... While you're waiting with patiently for Avance to officially open, we suggest checking out the well-done video on their website. It's got Bogle rocking a D'Alessandro's T (Rox represent!) while reverently sniffing Tom Culton's produce at the Headhouse farmers' market with sous chef Shane from Walking Dead, as well as a Scott Schroeder cameo.
