Stateside (1536 E. Passyunk Ave.), the American whiskey bar and restaurant from the owners of Green Eggs Café, has been plugging along just off the Passyunk Fountain for months now, and we've finally got some preliminary details on the hush-hush project.

No solid opening date yet, but right now it's kosher to share that George Sabatino, opening chef de cuisine at Barbuzzo (110 S. 13th St.), will be Stateside's executive chef. Sabatino, who was most recently holding it down on the line at Pub & Kitchen (1946 Lombard St.), is planning a menu of contemporary, thoughtfully sourced American small plates, about 20 total, with a handful of entrée-size choices. Expect domestic cheese boards, housemade pickles, oysters and a big focus on charcuterie, which Sabatino plans on curing in-house. Since beers, wines and spirits (lots of whiskey) from small producers will be the thrust of the bar, Sabatino aims to work booze into his menu in subtle ways, as well (think bourbon-brined chicken breast). "It's going to be very accessible, contemporary American, not backed into any corner," he says.

Owners Stephen Slaughter and William Bonforte are aiming for a fall debut. In the meantime, there are plans to host a pop-up at one of Green Eggs' two Philly locations prior to the opening to tease Stateside's menu. More on that soon.
