Those of us who lamented Cafe Estelle (444 N. Fourth St.) discontinuing dinner service, the p.m. potatoes to its brisk brunch meat, a few years back have reason to smile today. Chef/owner Marshall Green (above) is starting supper for the second time, making good on a long-ago promise. Devotees won't be able to pop in every evening, though; Green is doing dinner but once a month, promptly at 7 p.m. Tasting menu only, communal seating only. Twenty-five guests tops, so get those phones ready (215-925-5080). Consider this advance notice on the next two dates: April 25 ($70) and May 23 ($80). Check out the menus after the jump. Want. APRIL 25 2011

ROCKTOPUS: octopus terrine, wild rockfish, fingerling chips, parsley oil

Spring Onion Crepe: pickled spring onions, hard cooked egg, mustard

Pocono Rainbow Trout: fava bean, pearl onion, bacon, smoked trout and sorrel salad

Veal Loin: almond crusted sweetbreads, white asparagus, smoked potato sauce

Intermezzo: rhubarb sorbet, candied celery

Birchrun Blue: onion caramel, black raisin nut bread, spring onion butter

Beignets: ancho chile chocolate, brown butter ice cream

Cured Alaskan Salmon: English pea crème fraiche, salmon roe, pea tendrils

Chilled Asparagus Soup: bluecrab cake

Foie Gras and Rhubarb Duo: seared - salad – torchon - gelee

Seared Lamb Loin: escargot, fava bean, garlic lamb sausage

Intermezzo: lemon ricotta ravioli, lemon honey beurre blanc

Pecorino: English pea, pancetta, mint

Chester County Strawberry Shortcake: butter biscuit, chantilly cream
