Last Friday, I had pie for breakfast at Cafe Estelle (444 N. Fourth St.). Today, I repeat-offended, and I think you should join me.

Why isn’t there more pie in this town? Cupcakes, whoopies, red velvet whatever, they’ve all had their 15 minutes. So why not that allest of all-American of summer desserts? The Stephen Starr camp has floated the idea of all-pie dessert menu at their upcoming New England themer, but till then you’ll find me getting my fill of fruit-filled slices at Cafe Estelle. Last week was strawberry-rhubarb, and I thought today I might snag an entire pie to take home and eat in one sitting while watching series recordings of House Hunters International a second small slice. But alas, fleeting strawberry season robbed me of the pleasure, and chef/owner Marshall Green doesn't have the kind of sub-z storage that allows for big-batch berry freezing. No worries. Green had already baked a replacement: peach!

The filling was like juicy compote, stew-y almost, with big strokes of acid to balance the floral sweetness — a perfect expression of summer. I ate it straight from the case, cold, as you would pizza the next morning. Each slice is plated with a fan of fresh peaches and a dusting of powdered sugar, as well as a scoop of vanilla ice cream (if you want). I declined the latter; we all have our limits.

Eat this immediately!
