EAT THIS IMMEDIATELY: Tofu corn fritters at Circles

Like most South Phillies, Circles (1516 Tasker St.) is my Thai take-out and delivery (and, since their café opened two months ago, sit-down, too) go-to. So how, when I’ve eaten most of chef/owner Alex Boonphaya's menu, was it only two weeks ago when I finally tried the ballyhooed tofu-corn fritters?

Found in the appetizer section, these fritters come four to an order and look like slightly flattened crabcakes. Breaded in panko and deep-fried, the golden pucks crunch like potato chips, giving way to firm, allspice-scented centers of tofu twinkling with sweet yellow corn kernels. But there’s an invisible, unnamed ingredient that's the real key to these addictive snacks: shredded gouda. Added to the tofu, it gives the fritters an elasticity and flavor that makes you feel like you’re eating the dopest mozzarella sticks (as Friend of Meal Ticket JR astutely pointed out in the latest Notes from the Weekend), and the cup of chunky curried tomato/crabmeat compote, like an exotic marinara, backs up the comparison. Eat these immediately!
