Eat this immediately: Vietnamese chicken salad at Mekong River

Behold, my Official Favorite Thing to Eat This Summer, Viet-style chicken salad. This jewel-toned specimen hails from Mekong River (1120-1124 Front St.), quick becoming a go-to at Casa Erace. Frizzled shallots, potent fresh herbs, crushed peanuts with a brittle-like sweetness and a punchy, glass-clear dressing redolent of fish sauce and lime elevate delicate poached pieces of chicken, shredded red cabbage and other assorted roughage to the refreshment realm of frozen grapes and ice-cold lemonade. A judicious dribble of Mekong's blood-red chili oil makes it even better. This summer, eat this immediately!
