Jerky Alert: Side Project unveils Pho Jerky

Local dried meat artisans Side Project Jerky have teamed up with Time chef Sean Magee for their first ever collaboration, a pho-flavored jerky. And while we love the idea of scenting jerky with anise, fish sauce, basil, plum sauce, chile and all of the other tasty elements that go into a steaming bowl of pho, the story of how this side project came to be is just as exciting.

Side Project's Marcos Espinoza ran into Magee at a Municipal Waste show at Union Transfer back in June and the two go to talking about teaming up for a snackable version of this Vietnamese go-to. And a few monthes later the pho jerky came into fruition.  

The pho-flavored jerky is rolling out today at Cook and Green Aisle as well as Trove General Stove and online. A portion of the proceeds from the jerky's sale will go to benefit the Red Cross's efforts to assist those effected by Hurricane Sandy.

We had a chance to sample some of the pho jerky a few weeks back and the flavors are spot on, Washington Avenue-perfect.
