Joncarl Lachman talks Noord

If you're anxiously awaiting the Northern European cuisine promised by upcoming EPX project Noord, you'll want to head over to Zagat's blog, where you can check out an interview Danya Henninger did with chef Joncarl Lachman. In the conversation, Lachman talks more about the concept, the vibe (you may not ever need to use it, but why not learn what gezelligheid means in Dutch?), and why he regreats not returning to Philly sooner.

And, of course, he talks about the food: though some early word speculated Lachman would be zeroing in on the foods of his Dutch heritage, the chef clarifies here that he's "looking to cultures from the Alsace region north." So of course he's talking pickling, smoking, and the Danish art of smørrebrød.

Estimates for opening continue to vascillate slightly as these things always do (Lachman hopes for early April, which would be a bit of a bump-up from the May date PARC director/Noord landlord Sam Sherman guessed at when we spoke to him last month)—but Lachman told Henninger that he's thinking a few collabs and/or pop-ups will be in order while work on Noord is ongoing, so color us excited.
