Precipitous precipitation on Saturday couldn’t keep hungry and hooded from the grand opening of the La Copine Brunch Cart (we told you about its soft opening last week) from Nikki Hill and Claire Wadsworth.

The crowd had thinned by the time I splashed through the black-framed latticed gate of Garden Variety (Second and Poplar), LCBC's weekend home, but the music was still playing, the coffee was still hot (or chilled, depending) and Hill was still serving from her quilted-metal-encased kitchen, griddling up eggs and the moist slabs of banana bread you see above smothered with peanut butter and jelly. EZ-Up tents (and Wadsworth, equipped with a towel) spread around the garden shielded the collapsible tables and black and bubblegum-pink plastic chairs from the elements.

There’s no waiting in line at La Copine; Wasdworth takes orders while you take a seat. A food truck with table service?! Encourage me to be lazier, La Copine. I devoured that banana bread in seconds, then ordered seconds. The breakfast sandwich followed on a house-made English muffin, sweet and smoky chipotle ketchup soaking into the porous nooks and crannies. Between the bread: local cheddar and caramelized onions upheld on fluffy scrambled eggs the rich gold hue of risotto Milanese. Rain rapped on the vinyl canopies, but beneath, paradise.
