Sometimes I think I could be a vegetarian. I love vegetables; in the summer, my meatless intake way outmatches my consumption of burgers, hot dogs, steamers and all the other tasty animal proteins harvested from our fields and seas. But this time of the year, I couldn't do it. The chill frosting the air (no matter how subtle it might be this week) triggers that primal craving for roasted flesh, and fortunately, Meritage (500 S. 20th St.) is obliging with the season's first run of game, including the king of wild meats: venison. Chef Anne Coll is doing the deer with parsnip puree, chestnut and gingersnap sauce on her weekly five-course $39 pre-fixe, starting tonight and running through Friday. Bambi, daddy's coming.

Amuse Bouche

Pan Fried Wild Boar Dumpling, cranberry chutney

1st course

Grilled Quail, watercress endive salad, honey crisp apple, pumpkin seeds, balsamic fig glaze

2nd course

Korean Fried Guinea hen Thigh, collards, Oakshade cheddar polenta

3rd Course

Roasted Cervena Venison, parsnip puree, chestnuts, brussel sprouts, ginger snap sauce

4th Course

Flourless chocolate torte, pumpkin ice cream, pumpkin brittle, maple bacon caramel, cranberry sauce
