Pig tails meet peaches on the summer menu at Matyson

One of our favorite things about eternally chic BYOB Matyson (37 S. 19th St.) is the restless mind of its chef, Ben Puchowitz. Dude is constantly coming up with new dishes, be they for the weekly rotating tastings or the main menu. Today brings news of the latter; the fresh summer menu is in effect, heavy on of-the-mo' crops like honeydew (a juicy accent for kampachi tartare), peach (with barbecued pig tails) and watermelon (joining beets, tomatoes and basil on the side of the hanger steak, one of Puchowitz's favorites). We like the brunch-y sound of the pork chop with dark cherries, Swiss chard and bacon-cheddar waffle. Order in!

 

BBQ Pig Tails  

Peach, radish, sesame, korean chile sauce

Kampachi Tartar   

Sea beans, honeydew, tomato, whipped tofu, yuzu 

Rock Octopus   

Baby squash, black olive, harissa, caramelized yogurt

Veal Sweetbreads  

Fingerlings, guanciale, frisee, poached egg, black truffle

Seared Hudson Valley Foie Gras   

Banana bread french toast, hazelnut puree, serrano ham, coffee-maple

Spicy Cucumber Salad   

Chickpeas, feta, mint & cilantro, pickled chilies

Blue Moon Baby Arugula   

Corn, blackberries, lavender, ricotta salata 

 

Albacore Tuna   

New potatoes, fava beans, asparagus, veal breast, aioli  

Diver Scallops   

Yellow wax beans, porcinis, peaches, pistachio brown butter

Alaskan Halibut   

Chickpea noodles, cockle clams, smoked tomato, lemon verbena

Niman Ranch Pork Chop   

Bacon-cheddar waffle, swiss chard, dark cherries

Long Island Duck Breast   

Baby carrots, turnips, charred corn, 5 spice BBQ

Aged Black Angus Hanger Steak   

Watermelon, tomato, beets, basil, fried cheese

Lancaster County Chicken Breast  

Amaranth, baby bok choy, peanuts, egg, tamarind
