Second Jersey joint for Pub & Kitchen crew

Dan Clark, Ed Hackett and Jonathan Adams, owners of Pub & Kitchen (1946 Lombard St.), are going back to college. The restaurateurs, who also own The Diving Horse in Avalon (2109 Dune Drive), will open Prime, a snazzy burger shack in Rowan University's new $300 million revitalization venture, Rowan Boulevard. (Disclosure: My brother is a consultant on the project.) Inspired by turn-of-the-century butcher shops, the 1500-square-foot space with be clad in salvaged materials, with a 20-seat community table built of Lancaster barn wood as the room's centerpiece. The P&K crew will be flipping organic, grass-fed LaFrieda burgers by end of 2011, complemented by hand-cut fries, triple-thick shakes and fountain sodas. Just enough time to re-enroll.
