Southwark, Bibou and Bistrot La Minette (also Matyson) celebrate the snail next Tuesday

We're sure you already knew this, but next Tuesday, May 24, is National Escargot Day, the most lauded of all gastropodian holidays! As of right now, three excellent Philly restaurants — Southwark (701 S. Fourth St.), Bibou (1009 S. Eighth St.) and Bistrot La Minette (623 S. Sixth St.) — have something special and specifically snail-y in the works. More details after the jump.

- Southwark is offering a four-course, $35 all-snail tasting menu on May 24 and 25. Start off with a snail and braised pork shank terrine, then move into a snail/blue cheese plate with lovage and toasted walnuts; snail and mutton stew with spring veggies; and finally, snail and chocolate truffles. Some courses might be tweaked based on availability, but that sweet finisher is set. "Yes, you did read correct, that is a snail dessert," says Southwark sous chef Nick Macri. "Not a snail-shaped dessert, but a proper snail dessert."

- Pierre and Charlotte Calmels' Bibou BYOB is going higher-end with their snail celebration, offering a six-course snail tasting on the 24th at 7 p.m. (Reservations via email only — biboubyob[at]comcast[dot]net.) Offer on the $90 menu (does not include tax/tip) — scallop and snail cannelloni with sauce Joinville (seafood butter sauce); snail bone marrow; quail stuffed with snail, foie and red rice (whoa!); and more. Fig and goat cheese tart for dessert, not sure of potential snail involvement there.

- Over at La Minette, chef/owner Peter Woolsey is serving on both the 24th and 25th, with a $35 four-course tasting ($15 upcharge for beverage pairings). Food details coming soon. UPDATE [3:11 p.m.]: Dishes here will include Woolsey's classic escargots de Bourgogne, served in those adorable little ceramic crocks with garlic herb butter and croutons; escargots en papillote (snails, mussels, sardines, spring veg, broth); and a braised beef/puff pastry main accompanied by slow-braised snails.

[UPDATE 19may11]: Matyson (37 S. 19th St.) has announced that they, too, are getting in the festive escargot mood. Chef Ben Puchowitz is doing five courses for $45 from Monday, May 23 through Thursday, May 26. Check out crispy fried snails three ways; snail and sweet corn ravioli; escargot coconut curry with Vietnamese sausage; snail-stuffed veal tenderloin; and a chocolate-hazelnut mousse cake for dessert.

    I don't want to eat snails (they're biologically identical to their less-cute cousin, the slug) but I LOVE this photo. Reminds me of the Troublette label.

    Personally, I think this is FABULOUS and will be eating at each restaurant on my visit to Philly!
