The Farmers' Cabinet in pictures

Less than a week ago, Meal Ticket shared details on The Farmers' Cabinet (1113 Walnut St.), the new Center City spot from the crew that owns East Falls' Fork & Barrel, plus Bethlehem's Tap & Table and Bookstore Speakeasy. And just like that, they're ready to go  — we swung by earlier today to find staffers deep in training mode, prepping to swing their doors open tomorrow, March 17. Hell of a turnaround, especially considering the interior was still very much Joe Pesce's less than two months back.

The space, fabricated largely by owners Matt and Colleen Swartz and Matt Scheller, the brand-new restaurant already carries a broken-in look; the west side of the space is dedicated to the Scheller-curated Euro craft beer program (the plan is to have 22 beers on tap, with four handles reserved for sour/wild ales aged on premises by brewer Terry Hawbaker — that's coming in the summer). The east side of the Cabinet, meanwhile, features the cocktail bar, where consulting bartender Damon Dyer, who designed the opening list, mixed us up a "Pirate's Coffee" (spiced rum, demerara syrup, hot coffee, hand-whipped cream) and a whiskey sour with Buffalo Trace bourbon (they're mixing this drink "bespoke," meaning you can select from a big list of various bourbons, ryes, Irish whiskeys, Scotches, white whiskeys and so forth). Heading deeper into the space, you'll find dining seating — long, 40-head beer hall-type seating on one side, a smattering of tables for two- and four-tops on the other.

Chef Peter Felton, who's set up the opening menus for each Swartz/Scheller spot, cooked up a handful of rustic-yet-refined plates for us, including a whole roast squab with creamed corn and huckleberry jam; ribs with celery root slaw and a wort glaze (boar ribs are pictured, but they're gonna do Heritage pork ribs on the menu); and skate wing over lentils with a harissa aioli. We'll have more complete details soon, but for now, peep game!
