The Twisted Tail, the Southern-style restaurant and music venue planned for the former Kildare's in Headhouse Square (509 S. Second St.), is on pace for a July opening. At 4,000 square feet on the ground floor alone, the space is a beast, and TT will make good use of the elbow room, working in tables and a horseshoe-shaped bar; a band room called "The Juke Joint" with a bar, plus capacity for around 100; and a private-event friendly lounge. Owner George Reilly has tapped chef Michael Stevenson to make it happen on a charcoal-fired grill that'll crank out dishes like a trio of ribs (St. Louis and Chinese-style spareribs, plus grilled pacu fish ribs), grilled oysters and Kurobota pork saddle. Boozewise, Reilly is launching a bourbon-centric behind-bar and cocktail program, and will have 16 beers on draft and 40 in bottles.
