Jose Garces' Tinto (114 S. 20th St.) will feature a Basque-inspired prix-fixe menu to honor Pamplona's San Fermín Festival, the most famous feature of which is the annual "Running of the Bulls." The four-course small-plate menu will be available beginning on Wednesday, July 6 (actually the first day of San Fermín) and run through July 31. It costs $65 per person, with an optional Spanish wine pairing for an additional $40 per person. Check out the menu in full after the jump.

First: House-Cured Chorizo Pamplona with egg salad and pickled guindilla; Peekytoe Crab with piquillo puree, edible flowers and migas; and Heirloom Tomato & Melon with fine herbs, Pedro Ximenez and arbequina olive oil

Second: White Asparagus with jamón Serrano, Spanish olives and chives; Montadito de Ajoarriero, bacalao, choricero, potato; and Artichoke with Meyer lemon, pink peppercorns and fresh chorizo

Third: Chuleta, prime dry-aged sirloin with patatas riojas and veal jus; Rouget, heirloom cherry tomatoes, leeks and watercress; and Hongos, mushrooms a la plantxa, truffle oil, caramelized onion

Dessert: El Toro, flourless chocolate cake, raspberry jam, raspberry “banderilla”
