Honeybees, of course. On Monday, three hives of nectar collectors were planted on the top of Lynn Rinaldi and Corey Baver's elegant ristorante (1627 E. Passyunk Ave.). Lucky bees; at three stories up, they’ve got Center City views.

 

Rinaldi and Baver teamed up with apiarist and farmer Trey Fleming of Two Gander Farm in Berks County — that’s him, removing the hives from his cappuccino-brown truck — for the project. The bees are part of the summerlong transformation of Paradiso’s roof we told you about back in March; the series of square, wooden raised beds the couple built went in a few weeks ago, watered by an auto irrigation system installed by neighbor Urban Jungle. Already the heirloom tomatoes, everbearing strawberries, herbs, zucchini — "We're growing them mostly for the flowers," says Rinaldi, who cheese-stuffs and fries the trumpet-like blossoms — and raspberries are already popping. Baver says Ian Brendle of Green Meadow Farm is bringing soybean plants; looks like we’ll be seeing South Philly-grown edamame on the menu at Rinaldi and Baver’s Izumi (1601 E. Passyunk Ave.) later this summer.

 

For right now, though, getting the bees comfortable is the top priority. Fleming estimates the hives will yield 15 pounds of honey this season — a sweet deal, despite one potentially fatal issue: Baver is deathly allergic. "If Corey misbehaves," jokes Rinaldi, "I know where to send him."
