Why Nomad Pizza doesn't cut its pies

Monday's post on the serious movie screenings at Nomad Pizza (611 S. Seventh St.) — Amelie tonight — got us thinking about a query more than a few people have tossed our way since the Jerseyites opened in Philly three weeks ago: Why aren't their pies cut into slices? Order a pizza here and you'll get your baby on a plate, blistered, steaming, telling you all the wood-fired things you want to hear. But, 10 out of 10 times, it will arrive as one big bubbling round, with nary a convenient cross-cut to be found. Some people seem to be kinda peeved by this, but get used to it — Nomad ain't changing for nobody.

"We have never cut our pizza," says co-owner Tom Grim. "It took some adjusting to by customers in our Hopewell pizzeria, but now everyone is fine with it." Grim points out that in Naples, the birthplace of pizza, you'll never see a pieced-up pie — it's a purely American move. "The pizza is meant to be eaten with a knife and fork, not picked up by the slice," Grim continues. "We don't slice because it is the authentic way to enjoy this type of pizza." He adds that taking a circular cutter to a Nomad pie would also result in a soggy end product by the time it reached the table, as the juices from the sauce and toppings would begin collecting beneath the bottom crust.

So there you go. Much like the no-sandwich-halved house rule at American Sardine Bar, you can certainly perform food surgery yourself, but the kitchen cannot and will not participate.

    No slices makes it easier to throw the pizza onto the roof.

    When I had the pizza from the truck, however, it was sliced into quarters...
