Falafel Factory up for mid-January opening

Rob Rimeris tells Meal Ticket he's targeting the second or third week of January to open his first restaurant, Falafel Factory, at 32 S. 18th Street (between Chestnut and Market). The restaurant will feature both baked and fried falafel balls, done up in a variety of preparations, including the "California" (cream cheese, avocado spread, bell peppers, cukes, tomatoes, sprouts) and the "Caesar" (romaine, Caesar dressing, romano cheese). Sides include veggie dip, hummus dip and fries.

Rimeris stresses that while some establishments play up practices such as using LEED-certified building materials and biodegradable/recyclable packaging, the menu is the most vital area of focus when it comes to "greening" an operation � FF's all-veg approach, according to Rimeris, shrinks its overall footprint dramatically in contrast to an establishment serving meat. "The greenest thing anyone can do is to choose certain foods," he says.
