Starting today, Pub & Kitchen chef Jonathan McDonald is offering an extremely limited $37 Japanese pub menu featuring some of the first fresh sea urchins of the season. Meal Ticket popped our heads into the K part of P&K (1946 Lombard St.) yesterday to find Jonnymac hard at work de-spiking the unwieldy marine monsters in front of a Dexter-like trash bag tarp.

First course is a sea urchin/scallop sashimi with quick-pickled cucumber, radish, turnip, seawood broth and toasted chili. The main's a Far East riff on pork and beans, with ton-katsu style fried pork chops with miso-braised white beans, sea urchin mayo, edamame slaw and a sweet soy barbecue sauce. Rounding out the deal will be Hitachino Nest's Ginger Brew.
