M�m� chef/owner David Katz has released more info on the all-star dinner scheduled for Tuesday, July 28. (It was first mentioned on Meal Ticket last Thursday.)
You already knew that Katz has recruited chefs Michael Solomonov (Zahav), Jonathan McDonald (Pub & Kitchen), Steven Cameron (Noble), Pierre Calmels (Bibou) and Peter Woolsey (Bistrot La Minette) to collaborate on a five-course pork dinner. Check out bios for all the fellas.
Now comes word that there will be two seatings of 30 people each � 6:30 and 8:30 p.m. (We hear 8:30 might already be sold out.) The dinner is $75 a head, which includes a wine and beer pairing. Even without the booze, it'll still cost the same, "so take advantage and drink!" Katz writes on his Web site. What specific pork will the team be cooking? Black Berkshire, aka Kurobuta (with its ridiculous marbling, it's essentially the Wagyu beef of swine), and milk-fed pig from Montreal's St. Canut, to name two. Woolsey, who worked as a pastry chef fulltime before opening La Minette, will be making a pork dessert (!).
I called to make a reservation yesterday. I was told that there're definitely slots still open but the restaurant would not take my reservation. "... somebody will call you back... to see if we can accommodate you..." What? Is there an approval process?
I left a message on their voicemail but got no response. now i'm worried.
Relax everybody, there is no "approval" process. As you should know Patrick, since you were called back today and got a reservation for 2. The person who is handling the reservations for this event wasn't around yesterday and the woman that answered the phone was just trying to assure people there were still availabilities so they could stay interested. Take a deep breathe comment-ors! Not every situation has to be taken as a personal assault that needs to be posted on a blog comment board.
that explains it all. but, my desperate need for five courses of pig from those chefs still made me call today to make sure i got a reservation! :)

Sounds like a fantastic Idea, food looks great too. Will there be more of these dinners ? Though Black Berkshire (Kurobuta) is very good, it is not quite the best out there. Mangalitsa Pork has way better marbling and flavor. Check out this website. http://www.woolypigs.com/_introduction.html
