New chef, new approach at M Restaurant

mrestaurantatthemorrishousehotel.com Michael Caspi, late of Thomas Keller's Per Se in NYC, is the new chef at M Restaurant in the Morris House Hotel (231 S. Eighth St.). Former chef Pascual Cancelliere, who earned a good look from CP around this time last year for his Argentinian- and Italian-style small plates, has left to focus the whole of his energies on his long-awaited Italian Market BYO 943, a project we first noted in January of '09. Israeli by birth, Caspi's also worked for the likes of Alain Ducasse and Daniel Boulud. For his M menu, an opening version of which you can peep after the jump, the chef's leaning on local seasonal produce and sustainably raised meat and seafood; it's most definitely an ambitious new look, with multi-faceted entrées creeping into the high 20s. But come on, check out that duck breast preparation! M, which in its previous incarnation served on weekdays only, now does dinner Tuesday to Saturday from 5 to 10 and Sunday brunch from 10 to 5. Happy hour specials run from 5 to 7. Cold Heirloom Beet Borsht: Beet Tapioca, Celery Fronds, Horseradish Yogurt, Young Dill, Crunchy Parmesan 7 Greens, Herbs, and Lettuces: Fines Herbes, Peach Vinaigrette 9 Salad of Artichokes: Tomato Confit, Olives, Barigoule Dressing 9 Pan-Roasted Corn Ravioli: Corn Crème Fraiche, Pickled Corn, Caramelized Corn Purée, Parsley 14 Rain Bowed Trout: Rainbow of Vegetables, Blue Foots, Ricotta Gnocchi, Vegetal Vinaigrette 18 Diver Scallop Islands: Clams Supreme, "Pearls," Conchiglie, Crushed Grains and Seeds, Clams Consommé 22 Roast Chicken: Chicken and Peanut Sausage, Tomato Petals, Herbed Spätzle, Nut-Scented Roasting Juices 18 Sautéed Long Island Duck Breast: Almond Cream, Brined Cherry, Carrot Tails, Marbled Duck, Trofie Salad, Stone Fruits and Duck Jus 28 Braised and Glazed Short Ribs: Petit Turnips, Bacon Melba, Tarbais Bean Purée, Carrot Confetti, Tellicherry Tamarind Aigre Douce 24 NYC’s Loss, Philly’s Culinary Gain | South Of South (SOS) Posted 2010-08-05 07:37:40
