Paul's new menu under Greg Ling

Here's a look at the new menu at Paul from chef Greg Ling, who took over at the BYOB (1120 Pine St.) in late February. The menu's broken down into first, second and third courses. Definitely still New American in approach, with a couple of ethnic twists (shrimp tempura with XO aioli; puffy fish tacos; orecchiette with shrimp chorizo).

He said he uses whatever is the fresh fish of the day. Last Wednesday, it was fluke. It's a little deconstructed. Fried chunks of fish on top of fried puffed tortilla chips. The blood orange we used instead of lime gave it a nice touch. Not like the usual fish taco, but I hear he might put a more traditional fish taco on the menu, also using the fish of the day.
