An Aviation cocktail
The change of seasons means new menus here, there and everywhere. Jose Garces' paen to refined spirits, Village Whiskey (118 S. 20th St.) got into the vernal swing yesterday when they dropped seven new cocktails into their Prohibition (classic) and Repeal (modernized) menus. Warm-weather appropriate rum takes a star turn in several of the new imbibes, like the classic Floridita Daiquiri (white rum, maraschino liqueur, lime, simple syrup) hybridized with a Hemingway version by the addition of grapefruit juice. First appearing in print in Trader Vic's 1947 cocktail book, the Tiki-inspired Fogcutter (El Dorado 5-year rum, brandy, gin, lemon and orange juices, orgeat and simple syrups) gets a float of the newest up-and-coming cocktail add-on, sherry. Mount Gay rum, apricot liqueur and jam with lemon, Angostura bitters and simple syrup combine to form the Harvard Girl, "inspired by a girl I knew who dropped out of Harvard," said creator Lindsay Krueger with a wink. Corpse Revivers, a distinct category from cocktails in the pre-Prohibition days, are blended from sweeter, oilier "Old Tom" gin, Cointreu, Lillet and lemon juice; Keith Raimondi's Latin Quarter pairs a custom bergamot tincture with tequila, Campari, Cointreau and dry vermouth for a springlike interplay of aromatic citrus with sharp spirit. Punch fans might have to duck after this one: the Village Sangaree packs sour mash bourbon, lemon juice, triple sec, Burgundy wine and double bitters into one innocuous-looking glass. Last but not least, Stephen Siebert's Cellar Door uses the venerable Carpano Antica Italian vermouth in concert with Rittenhouse Rye, lemon juice, demerara sugar syrup, orange and mole bitters and woodsy rosemary leaves.
