When Stephen Simons, co-owner of The Khyber, announced his longtime nightspot would close and transform into a Japanese izakaya headed by the acclaimed, elusive Todd Dae Kulper, you could say some people were mildly upset. But, “The Khyber just is not big enough to set up right for a sushi bar and showcase what Todd can do,” Simons told Meal Ticket today. The izakaya concept was scrapped in favor of a gastropub with a Southern twang and menu by Mark McKinney, who runs the kitchens at Royal Tavern and both Cantinas. Official name is Khyber Pass Pub. Official opening is next week. “We’re really excited about it,” Simons says. “We’re adding a bunch of taps today and two beer engines tomorrow.” In total, there’ll be 20 taps and loads more bottles representing a range of local and international craft brews, many available in half-pint portions and pitchers. Stay tuned to Meal Ticket for McKinney’s menu; should have it for you soon. UPDATE: Check out this post for the menu and more food info.
