Things get started with a bacon, cheddar and Stoudt's Gold soup, then local farmers are highlighted with a salad of local lettuces, hazelnuts and confit chicken. Green is also braising boar shanks in Scarlet Lady, a mildly hopped, caramelized red ale that serves as that course's beer pairing.
