Chef Zama Tanaka's Zama (128 S. 19th St.) has become quite well-known for its sushi stylings since opening in December of 2009, but now the restaurant has begun positioning itself as the city's premier sake drinker's spot, as well. Curated by GM Bryon Phillips, Zama's constantly growing sake program in multi-faceted, comprising by-the-glass/by-the-bottle lists, straightforward cocktails, moderately priced flights ($9-$14) spanning multiple sake styles (from unfiltered nigori to high-end junmai ginjo), and even flavored post-meal sake sips (think plum or ginger) that serve as unique digestifs. Phillips, who's teamed up with an importer to land many of the restaurant's Zama-exclusive varieties, is keeping the prices for his bottles — warmed, when called for, in a custom sake-heating machine — on the reasonable side to encourage exploration. If you're in more of a mixed-up mood, though, peep Zama's cucumber saketini (cucumber water, sake, vodka) or their muddled-up take on a winter mulled wine drink, which combines lime, orange and cherry with sake, Merlot and cinnamon.
