Consultant Jon Taffer (above, center) has been in the business of reconfiguring bars and restaurants for over 20 years.  Clients of his company, Taffer Dynamics, include Cabo Wabo Cantina in Mexico, Morton's of Chicago and several major hotel chains. Along with provoking tired business into new money making changes, Taffer got Pulsations — one of the Philly area's grander discos — off the ground in the 1980s. Now, with the help of the MTV-owned Spike TV network, Taffer is debuting a program that teaches old chefs and owners new tricks. That show, Bar Rescue, has spent the last few weeks in Philly, first at Downey's on Front and South, then Old City’s Swanky Bubbles (now renamed Sheer) at the end of last week. “It was about time," says John Frankowski (above, left) a long-time owner of Swanky Bubbles. "The place needed a makeover bad and I was proud that these guys wanted to help me."

Spike TV's new show Bar Rescue — think along the lines of Ramsay's Kitchen Nightmares, except swap out that surly Scot for hospitality consultant Jon Taffer and flailing restaurants for failing watering holes — will be filming in Philadelphia during the second and third weeks of this month. The names of the two establishments Taffer will be flipping in just three days (they revamp the entire shebang and then host an open-to-the-public "reveal party") are embargoed for now, but feel free to venture some guesses in the comments. Think of it this way: If you wanted to find a really shoddily run bar in Philly, which neighborhood(s) would you head to? The show is set to premiere on Spike this summer.

UPDATE [06may11]: The first venue the Bar Rescue crew will make over: Downey's (526 S. Front St.), from Tuesday, May 10 to Thursday, May 12. On Thursday, expect an open-to-the-public "reveal party" to start around 9 p.m. The second location to be made over is in Old City, name soon ...

Not sure if it's the distractingly fickle weather or the fact that I'm leaving Philly for a few days starting tomorrow morning (expect lighter-than-usual posting), but all I've really been doing today is watching the rap scene from Teen Witch on YouTube over and over again and scrolling through the Internet-birthed glory of Tom Haverfoods. For those unfamiliar, on the most recent episode of NBC's excellent Parks & Recreation (funniest show on TV, EASY), Aziz Ansari's character Tom Haverford has an extended bit about the asinine names he uses for foods and beverages ("I call noodles long-ass rice ... fried chicken is fry fry chicky chick.") Tom Haverfoods extends the joke into perpetuity; just keep hitting refresh.

Sooooo glad we just came across this, a new Comcast OnDemand children's program entitled "LET'S EAT!" It appears to involve Kurt Hunte, one of the dudes from Plastic Little, and pro wrestler Hydra from the Philly-based league Chikara cooking kid-friendly recipes in a Pee Wee's Playhouse-esque kitchen. ("The only thing more fun than eating a cheeseburger and then eating a pizza ... is eating a CHEESEBURGER PIZZA!") If that's not incredible enough for you as a standalone reason to watch, about 1:35 in, Spank Rock and Amanda Blank materialize and rap kid-friendly raps about eating, with edible -costume background dancer support from the Vaudevillains Mummers troupe, reprising their Philly Phood Phantasia roles from New Year's Day 2010. Life is weird and glorious.

Chef Peter McAndrews of Paesano's (above, on the Philly Pork Crawl) gets his Flay'ed out moment in the sun this Wednesday, Feb. 23 at 8:30 p.m., when Food Network airs the Throwdown with Bobby Flay episode featuring McAndrews squaring off against the Iron Chef in a "grinder" battle. (Can't say we've ever heard anyone in Philly refer to a Paesano's offering as a grinder, to be honest. Isn't that more of a New England thing?) The episode, which taped in November, saw McAndrews pitting his signature beef brisket/tomato/fried egg Paesano sandwich against a creation of Flay's. Here's the ep description from FN's site (wonder what they mean by "15-round championship" ... ):
Philadelphia is known as the city of Brotherly Love; except when someone comes and challenges a local hero - or sub, or hoagie or grinder in this case. Whatever you call it there's no love lost when Peter McAndrews puts his famous "Paesano" grinder up against Bobby Flay in a 15 round championship Throwdown. Will Bobby's Italian grinder go the distance?

Drew-

I say grinder when the person on the other end of the phone doesn't understand me saying I want them to put the ham and cheese hoagie in the oven.

Me: "Can you throw the hoagie in the oven to melt the cheese?"

Them: "You want me to do what?"

Me: "Make it a grinder."

Them: "Oh."

Yea in Philly a grinder is a hoagie with cheese melted on top. However, Paesano's does not serve grinders.

I'm familiar with the term grinder, my dad is from the CT/MA border and they're all over the place up there, but honestly I've never heard anyone use the term grinder in Philly before.

The term grinder has been used in Philly for years. It means the hoagie is heated. I think it just means it's a sub in other areas. So we'll see what it means on Throwdown.

Start planning your viewing parties now, people: Two of television's most popular food programs are putting Philly's cuisine and culinary talent in the limelight.
travelchannel.com
For your first round of must-see TV, tune in as Travel Channel's resident fearless eater and host of Bizarre Foods, Andrew Zimmern, tests his adventurous tastes in Philadelphia. Zimmern completed his tour de force of Philly over the summer, reportedly stopping by Reading Terminal Market and John's Roast Pork, among other spots, along the way. Also keep your eyes peeled for Meal Ticket's pride and joy, Felicia D'Ambrosio (that's the back of her head above!), making a special appearance alongside Zimmern. The episode airs Tue., Jan. 25, at 10 p.m.

Next up, clear your schedule at 10 p.m. this Sunday, Jan. 30, when two members of Philadelphia's galaxy of star chefs, Iron Chef Jose Garces and Zahav chef Michael Solomonov, face off in Kitchen Stadium on Food Network's Iron Chef America. We're pulling for a secret ingredient outside both competitors' wheelhouses to keep things interesting (no pork for you, Jose!). What secret ingredient would you like to see? Leave your suggestions in the comments, we'll be sure to pass them along to The Chairman. As far as local viewing parties go, no official details just yet, but we hear Solomonov will be watching the show Sunday night at his Percy Street Barbecue (900 South St.).

A few months after converting his summertime water ice stand into a gourmet soup bar, Darrell O'Connor of Doc's (169 W. Girard Ave.) found himself being questioned regularly in regards to the whereabouts of a man known only as the "Soup Nazi." O'Connor admits that he hadn't seen the famed Seinfeld episode until recently, but following an overwhelming number of customers bringing up the resemblance of Doc's to the fictional soup stand, O'Connor reached out to the man behind the impatient mustachioed legend, Emmy-nominated actor Larry Thomas, and invited him to Philadelphia. Thomas will be serving knee-buckling excitement to Philadelphia Seinfeld fans, ladling in full Soup Nazi get-up this Saturday, Jan. 15, from noon to 3 p.m. While we can't say for sure that Mulligitawny will be on the menu, please remember: No embellished orders, no extraneous comments, no questions, no compliments. Just following the ordering procedure and you'll be fine.

Baker Elizabeth "E" Halen, who took over the Flying Monkey hub at Reading Terminal Market this fall, has earned her fair share of national attention for her Pumpple Cake, the tempestuous caloric orgy of pumpkin pie, chocolate cake, apple pie, vanilla cake and buttercream. Halen will be featured on Food Network's Outrageous Foods — which is actually shooting in Philly right now, at Jake's Sandwich Board and The Lola Bean (they carry goods from It's A Cupcake) — tomorrow, Jan. 7, at 10 p.m. She'll show host Tom Pizzica how to put together the beast from start to finish.

She needs to credit Charles Phoenix, the originator of the Cherpumple - it also includes a cherry pie:

Jake's Sandwich Board at 12th and Sansom will be featured on an upcoming episode of Food Network's Outrageous Food, the new show hosted by recent Next Food Network Star contestant and area native Tom Pizzica. Jake's will be closed for business this Thursday as FN films — the show, which focuses on "over-the-top eats," will highlight the sandwicherie's 5-lb. Philly Challenge — but they'll be open to the public as the crew shoots B-roll this Saturday, Jan. 8, says co-owner Sean Stein.

On Dec. 5, Food Network's Iron Chef America aired its "Battle Sparkling Wine" episode, one that featured Philly's Jose Garces edging out Mike Lata of Charleston's excellent FIG 70 to 67 in a bubbly-based clash. (We ate at FIG recently and can confirm that Lata, a James Beard winner, was a more-than-formidable opponent for our guy indeed! Eater has clips.) Now, for the first time since landing the Iron Chef gig, Garces is making one of his multi-course meals available to the general public. Visit JG Domestic (Cira Centre, 2929 Arch St.) between now and Dec. 30 and you can eat like an ICA judge; Garces' five-course sparkling dinner will be available for $65 ($25 upcharge for beverage pairing). Check out what that entails after the jump. - Champagne and Blinis with various garnishes: prosecco-marinated artichoke with parmesan espuma, hackleback caviar with champagne-chive cream and cava-cured salmon with baby fennel and fresh goat cheese - Champagne-Poached Oysters with champagne-sorrel broth, hot potato-champagne espuma, pickled chanterelles and guanciale - Seared Diver Scallops with sparkling wine hollandaise and sparkling wine soubise - Prosecco-Braised Rabbit Leg with roasted rabbit loin, gnudi and tomato-prosecco fondue - Honey Cake with manchego mousse, cava gelee, cava honey, cava-macerated strawberries and strawberry bubbles

seriously?

Doesn't serving Champagne, Cava, and Prosecco violate the "domestic" theme?
