Last week, we tagged along with chef Peter Woolsey and his crew from Bistrot La Minette (623 S. Sixth St.) as they traveled to New York to cook an opulent French Christmas dinner at the James Beard House. (The menu for the dinner is here.) We'll have much more on the experience in this week's CP food section, but for now, take a gander at these Philly dudes in full preppin'-weapon action.

Since we reported the move way back in August, restaurateur Robert Reilly has been renovating the former Michael's Cafe and Roselena's like a madman in preparation for his Salt & Pepper to move from Queen Village to East Passyunk. Stripped of its overbearing Victorian foppery, the space is ready for its close-up and soft-opens tonight as S&P's new home. Too bad it'll be dark; you should see the way light pours in from the first-floor windows like butterscotch, rippling across restored hardwood floors with cherry inlay and a front bar that will land its license soon. (Fingers crossed.) The bar area steps up though a latticed archway into the dove-gray dining room with a candle-filled fireplace and windows on two sides overlooking a pocket patio that makes us wish it was spring already. Butcher paper on the tables. Pressed tin on the ceilings. Second floor is home to a second dining room--the two-top by the bay window will be prime real estate--and the kitchen, where one-named chef Kouma is cooking on"The Warrior," a 10-burner, circa-1970 stove. His little-bit-of-everything menu will be taut tonight (scallops with winter squash, gnocchi, calendar-correct coq au vin), with the full bill of fare rolling out when they reopen after the holidays. Call for rezzies.

Happy to see the expansion, but I would be lying if I said I wasn't going to miss the more intimate space and (for me at least) the more convenient location. Fear not, Salt + Pepper, even a long walk on a cold Philly night can't keep us apart! Good Luck!

Was leaving CP HQ yesterday evening and happened upon chef Tyson Wong Ophaso's Tyson Bees truck parked on the corner of Third and Market. Ophaso and his guys Cliff Asavadejpakdee and Jacky Li were in Old City to cater to the crowd checking out Yis "NoseGo" Goodwin's opening at Stupid Easy; Goodwin's the one who gave the Asian street food-dispensing truck that incredible paint job. We scarfed down a cheesy kimchi quesadilla, edamame tofu taco and pork banh mi with a gang of pickled veg before waving the white flag; though there will be some staples on the menu (it'll be tight — usually no more than 10 items), Ophaso anticipates keeping things fresh by switching up offerings on the regular. Tyson Bees' steady post-up is 33rd and Spruce, weekdays from 11 a.m. to 6 p.m., with weeknights and weekends reserved for roaming the city. They'll have a Twitter account up and running soon.

The Corner (102 S. 13th St.), a resto redo of cocktail bar APO, previewed yesterday evening in support of its opening night (tonight!). We dropped in for a peek at the new space, worked over by owners Tony Rim and Drew Milstein, and the menu, from chef Scott Swiderski (formerly of Buddakan) and his sous John Taus (last of Snackbar). APO's ample ground-floor drinking space has been converted into banquette and open booth seating, while the long bar toward the rear of the space now serves as a narrow-but-bustling open kitchen with a bit of stool seating. (It's fun to watch the kitchen guys sending plates from the far end of the kitchen to the pass up front; all the timing and finesse of a relay race, without any of that pesky sprinting.) Swiderski's comfort food-ish menu is tight, with small sections of starters (peep the ridiculously good "shrimp in a blanket," head-on prawns wrapped in noodle-like fried kataifi), salads, entrées (burgers, sandwiches ... the apple cider-brined, batter-less fried chicken was ill) and veggie sides. On the drinking end of spectrum, they're offering some classics (a nice Sazerac) as well as some house originals (the whimsically named "Burning in Water, Drowning in Flame" combines reposado, super-smoky mezcal, green apple, lime, cayenne pepper and bitters). UPDATE: Check out The Corner's dinner, dessert and drink menus after the jump.

UPDATE [03jan10]: Here's the full photo tour of The Dandelion's now-completed interior. Quasi-crashed a staff beer tasting at The Dandelion, Stephen Starr's English-minded pub at 18th and Sansom, and snagged a handful of pics of the still-very-much-under-construction interior.
Get the flash player here: http://www.adobe.com/flashplayer
Set (at this point) to open the week after Christmas, the space is a combination of what was Mantra and the former Stiletto shoe store, meaning it's huuuge. It's spread out over six distinct rooms on two floors; they aim to have a stroll through The Dandelion feel like a walk through a rich old person's home, if that rich old person's interior designer was Shawn Hausman (Butcher & Singer, Parc). Many design elements have been brought over from England, from wall paint and tiling to rugs and upholstered bar stools. Above, check out a few shots of what's being referred to informally as "the dog room," since it's decorated from end to end with canine-related artwork and tchotkes (doggy curtains, too!) The servers and barstaff, under the tutelage of SRO beverage manager Jay Willard, tasted through a bunch of beers off the bottle/can list, which includes UK standbys (Boddington's, Samuel Smith Nut Brown Ale, Belhaven Wee Heavy), other Euro fare (Weihenstephaner hefeweizen, Triple Karmeliet) and American crafts aplenty (Sly Fox Phoenix Pale Ale, Duck Rabbit Schwarzbier, Two Brothers Cane & Ebel). Drafts will be available in half pint (10-ounce) and full pint (20-ounce) glasses. "Will this make me feel like junk in the morning?" one server asked of Naragansett, which someone else had compared to kill-the-case session beers like Lager or PBR. No way dude! Drink 12. Food details we were able to glean (chef Robert Aikens' menu is not yet finalized) — they're still working on their burger, which could end up as a LaFrieda production (they're testing multiple brands, grinds, etc.); they'll do traditional "Sunday roasts" (think whole organic roast chicken or a whole prime rib roast, plus sides) on Sundays and on bank holidays, as is traditional in the UK; and there are plans eventually to launch an afternoon tea, with a dainty menu of bites both sweet and savory. Speaking of snacks, here's what you might find on The Dandelion's bar menu upon opening:
  • Roasted spiced bar nuts with rosemary
  • Fish cakes with lemon garlic mayonnaise
  • Deviled eggs
  • Grilled Welsh rarebit
  • British cheese board & Savoury biscuits
  • Smoked salmon and Trout pate, Brioche toast
  • Pickled beetroot jar with olive tapenade and goats cheese with sourdough toast
  • Chicken and duck liver parfait, Grape Chutney, Cornichons, brioche toast
  • Berkshire pork pate with wheat toast, celeriac remoulade and shallot pear chutney

Hey Dan, it was a beer tasting, with 30+ staffers taking small sips of close to 20 different beers, discussing them, etc. While I'll be the first to champion the proper glassware for the proper beers, I think the use of plastic cups for such a venture is understandable.

Dan
Posted 2010-12-16 15:49:40
Hi Drew, thanks for the response. I did think about that. I imagine it may have been tough to rinse out real glasses? If anyone could afford it I would imagine Starr could. I do wonder how much plastic cups affect the taste of any beverage. I'm actually not a huge "proper" glass freak – although at least aesthetically the proper glass is nice. But I DO get a plastic funk smell when I drink out of solos. I also wonder about a beer tasting which includes pretty readily available beers like this, but I imagine you have to educate staff somehow.

To me, this place has 9+ dollar beers written all over it. Don't get me wrong I bet the food will be good, the environment nice and the beer selection decent, but I can get all that and not get racked over the proverbial coals elsewhere. I hope I'm wrong b/c otherwise this looks like it could be a swell time.

Oh, and I agree, who drinks Triple Karmeliet out of solos?

Mariel Freeman and Mat Derago's Shot Tower Coffee, which we sneak-peeked (snuck pucked?) last week, officially opened for business this morning at 542 Christian. Beautiful, natural light-filled space, as you can see above. The couple is rocking Stumptown beans on a galactic warship of a La Marzocco espresso machine — this new model, which allows a barista absolute control over pressure levels in the seconds it takes to pull a shot, is the first of its kind on American soil on the East Coast. Nothing too crazy as far as food goes just yet — they're doing an array of bakery-case breakfast treats for now, but may expand their offerings in the future. Shot Tower is open daily from 7 a.m. to 7 p.m.

Marabella Meatball Co. officially opens tomorrow, Dec. 9, but we poked our heads in to a dry run yesterday evening. (We first mentioned it here in October.) Right at the corner of 12th and Walnut, it's a modern, nicely appointed space well-equipped for both sit-down and takeout business. The shop's the latest venture for the Marabella clan, which has operated a number of casual Italian concepts in the Philly region over the years. (Spearheading this location is chef Gabe Marabella, along with his son, also named Gabe.) They're doing four varieties of meatball here — beef, pork, chicken and vegetarian (bean-based) — and they're not blending up their meat (e.g. a beef/veal/pork mix for a traditional Sunday gravy addition), as many ball rollers do. You can build your own sauced/topping-ed sandwich — either on a hoagie roll, a round bun or sliders, all coming from Liscio's — or go with one of their options. We went the slider route, scarfing one of each meaty option — all quite tasty, but loved the old-school beef ball in particular. UPDATE: Here's the official menu (PDF).

Kennett, as we told you last week, opened over the weekend in former digs of Lyons Den at Second and Christian. We dropped in to a packed house Friday night for a little sneak-peek action. Any semblance of Lyons' divey personality has been scrapped in favor of a narrow but high-capacity interior, with a handsome dark-wood-laden bar up front (check out the pretty arched shelving stocked with booze) and cocktail/banquette seating leading way back to a semi-open kitchen and pizza oven station. Scattered artwork, mirrors and candles have warmed the space up considerably for the neighborhood. They're close to reaching certification from the Green Restaurant Association (more on that here). Owned/operated by Johnny Della Polla (he last worked with Yards here locally) and Starr vet Ashley Bohan, Kennett's name pays homage to the history of the address (848 S. Second St.). In the early days, Ukrainian immigrant Stephen Kennett and his wife ran a Prohibition-era boarding house (and covert distillery!) in the space; his son, also named Stephen, eventually took it over, and it operated as Kennett Café until 1986, when he sold. While Della Polla was working on opening, Ted Kennett, Stephen Jr.'s grandson, contacted him; he'd read that someone was revamping the old digs using his surname, and provided a number of original family photos that the Kennett crew has proudly displayed throughout the restaurant. Onto the food and drink. It looks like the restaurant's website is temporarily down, but we grubbed on the following off chef Brian Ricci's affordable, smarter-than-your-average-pub menu: - dinosaur kale salad, beets, roasted winter squash, Bulgarian feta, sherry vinaigrette - red wine-braised French puy lentil salad, carrots, red onion, celery, chervil, sherry vinaigrette - hamburger, bone marrow (worked into the patty), S&P, pickled onion, lettuce, anchovy mayo (this burger was awesome, definite contender) - lamb burger, smoked paprika, cucumber yogurt slaw, capers, shaved onion, purple cabbage, toasted cumin On the boozy end of things, they had plenty of craft beer on tap (downed some Victory Prima Pils, Ithaca Flower Power, and a few other things). Della Polla's association with Yards means they'll be get super-fresh cask ales and maybe even some specialty beers from the brewery. And there's also a cocktail list that's been developed by uber-tenders Christian Gaal and Phoebe Esmon.
