Thanks to the Braiser for calling our attention to this Tasted TV Burger Lab show featuring Richard Blais. Definitely worth a watch if you're a fan of sophomoric humor, manic energy, and seeing people break—and we'll just assume that you are like us on this front.
Michael Klein over at the Insider got a few more details out of Leigh Maida, Brendan Hartranft, and Brendan Kelly about their exciting new Center City project, moving into the much-fretted-over space at 216 S. 11th St. The new venture has been dubbed Strangelove's and will feature a draft list twenty-deep, plus a handful of bottles; they're still on the hunt for a chef. We can't wait to see what they come up with.
Eater filled us in on some changes at Square Peg (929 Walnut St.) that have chef Matt Levin leaving to work with chef Jean Marie Lacroix at Brûlée Catering. Brûlée has the same ownership and the move was apparently at Levin's behest, so hopefully this new post is a better fit.
Valley Shepherd Creamery, which we talked about just before opening, opened for business on Wednesday at the Reading Terminal Market. They're also grilling up specialty sandwiches, which you can get cooked with bacon or duck fat if you so choose, under the name Melt Kraft. And Keven Parker Soul Food Cafe (from the owner of Ms. Tootsie's) opened on the same day, serving up their awesome fried chicken and other soul food specialties in a surprisingly stylish setting given the bustling Market locale.
Generally summer tomatoes spring to mind when thinking about Jersey's finest but this upcoming Wednesday Jersey's Finest is coming in beer form. This collaboration brew from Iron Hill head brewer Chris LaPierre and Flying Fish's Casey Hughes is an extra hoppy American IPA.
In honor of the debut Jersey senator and beer-lover Don Norcross will there sampling pours of hard to find beers from both breweries and hopefully chatting about the New Jersey Craft Brewers Bill, a bill that aims to put Jersey on the map as a serious craft beer destination.
Jersey's Finest taps at 6 p.m. on Wednesday, January 23 at the Maple Shade branch of Iron Hill (124 East Kings Highway) .
Think you know your bonito from your botagra? First We Feast, Complex's new food blog has lined up a list of 20 culinary terms to test your food vocab knowledge. Many of the words on the list are ones that aren't necessarily unfamiliar, they're more like the ones that you might have a general idea about but not necessarily a full grasp on the recipe or technique. Head on over to First We Feast to learn about the difference between rillettes and confit, the finer points of 'nduja and colatura, an aged anchovy sauce.
This week South Philly Review restaurant critic Phyllis-Stein Novack is checking in at EPX BYOB Will (1911 East passyunk Ave.) where she finds Christopher Kearse's tweaked French fare to be quite to her liking.
If you're wondering why it took PSN and husband Edward so long to make it to Will it's probably worth mentioning that Will's warm weather open window policy was a little off putting to Stein-Novack in the summer months so she decided to wait until temperatures dropped and windows shuttered.
Beginning with warm bread and softened herb butter, braised to perfection baby artichokes and gloriously flavored head-on shrimp, PSN's meal was off to a great start.
Although PSN is not a fan of molecular gastronomy, she was fascinated by Kearse's modernist onions in an heirloom carrot salad:
"Two tiny, and I mean tiny, sweet red whole onions were marvelous in flavor and texture. I never ate anything like them. Our server described them as small balls that pop in your mouth oozing a flavorful liquid. They were cold, so I assume they could have been frozen with liquid nitrogen. Still, the intriguing balance of flavors, colors, textures and ingredients made this a memorable dish."
And the seafood foam accompanying perfectly cooked Jersey Shore scallops intrigued her taste buds.
Duck served three ways was the star of the evening with confit, juicy breast and duck sausage incorporated into a lasagna. Although the dish was satisfying, Edward would have preferred to have had a few more vegetables on his plate.
Aside from being a little on the dry side, when it came time for dessert a pistachio-tarragon financier brought PSN back to her days spent in Paris.
And while PSN was not without complaints about her meal at Will (too small portions, monochromatic scallops) she went ahead and awarded it a stellar rating: three and a half tips of the toque!
On today's Afternoon Snacks, we've got cheap eats, free beer, and citrusy treat we definitely need to eat.
Percy St. BBQ (900 South St.) spells it out for you: their great Resto Week deal overlaps with National Beer Can Day, meaning that Thu., Jan. 24 is the day you want to hit the BBQ joint to eat and drink for a song. And let's all thank them for making it so simple.

In case you were in danger of forgetting that Flying Fish is from Jersey, they’ve got a couple new beers coming up that will further underscore their Jerseyness for you.
First up is their second-annual collaboration with Iron Hill Brewery, which will debut next week. Dubbed Jersey’s Finest, the joint effort is an aggressively hopped IPA. NJ State Senator Don Norcross will be on hand for the ceremonial tapping of the keg (Norcross championed S-641, the bill known more commonly as the NJ Craft Brewers Bill)—but of course, the draw is the beer. In addition to the new collab, they’ll be tapping some other very noteworthy beers: you’ll find the great Exit 16, wild, bourbon-aged cherry Iron Fish (last year’s collaborative black IPA barrel-aged with cherries and brett), and S-641, which is a blend of Flying Fish Hopfish and Iron Hill’s Abbey Dubbel made to commemorate the bill it’s named for. Check out all the action at Iron Hill Maple Shade (124 E. Kings Highway) on Wed., Jan. 23 starting at 6 p.m.
Then, in early February, keep an eye out for FU Sandy, which they swear up and down stands for “Forever Unloved.” All of the proceeds (not just the profits—the labor, ingredients, and equipment for this one were all donated) from the sale of the beer will go to the many New Jersey victims of Superstorm Sandy that are still struggling to put their lives back together. The organization that will receive the funds—estimated to total about $50,000 based on the amount produced—will be nominated and voted on by Flying Fish fans. The beer itself is described as a “hybrid wheat-pale ale,” brewed with a brand-new experimental hop donated by the American Dwarf Hop Association. The outlook is for a sunny brew with notes of tropical fruits that will call to mind better days at the Jersey Shore—the kind of days we'll see again with the help of the money raised by the beer. So go ahead and drink with impunity!
Earlier today we told you about the one night only Navajo Taco pop up happening this upcoming Monday at 12 Steps Down (831 Christian St.), a collaborative effort between Lucio Palazzo of La Calaca Feliz, Marcos Espinoza of Side Project Jerky fame and friend of Meal Ticket Hawk Krall.
If you were one the fence about attending Monday's taco festivities we've got some more info that will most likely make you want to make your way to 12 Steps on Monday.
Krall filed a report on the pop up over at Serious Eats complete with a limited edition poster he designed for the occasion. Here's what he as to say about this unique history of the taco:
"Ever had a Navajo Taco? A cousin of the puffy taco, Navajo Tacos start with a funnel-cake-esque base of frybread, topped with "chili beans", lettuce, tomato, and shredded cheese, and can be found at state fairs and reservations across the southwest. Nearly impossible to find outside of Utah, New Mexico, Arizona and Colorado, though, we're bringing them to Philadelphia in the form of a pop-up dinner next Monday night."
Over at the Daily News Meal Ticket godfather Drew Lazor checked out the test run of tacos that Palazzo and Espinoza rolled out last weekend and the story of Espinoza's longstanding love of the Navajo taco.

Today Star Chefs dropped their list of 2013 Rising Star Award Winners and the line up is a pretty great mix of touted talent and new comers. On the 'we could have told you that' end of things we've got Joshua Lawler of Farm and Fisherman, Rittenhouse Tavern's Nicholas Elmi, Greg Vernick, and recent three beller Eli Kulp of Fork. Brauhaus's Jeremy Nolen took the prize for concept chef, Kevin Sbraga won the title of community chef and Le Virtu's Joe Cicala got an artisan nod.
Some of the lesser known names to get Star Chef honors this year include Sara May and Davina Soondrum of Franklin Fountain and Shane Confectionary, R2L pastry chef Peter Scarola and JG Domestic chef Yun Fuentes.

The Garces Group is going to be hosting a tasting gala and awards ceremony on Thursday, February 21 at the Kimmel Center. Tickets are going for $90 for general admission or for an extra $25 you can upgrade to VIP status which will get you a stop at the awards ceremony plus a Champagne and caviar reception.
