Small section this week due to the holiday! - Adam Erace drops into Philadelphia Bar & Restaurant — aka PBR — in Old City to check out former Modo Mio chef de cuisine Jordan Sauter's take on a gastropub menu. Quite a few hits, as many misses. - Wine for one: Vino Solo is a brand-new wine product — bottle and glass in one! — from Philly-based company KDM.

Cantina Feliz, the Fort Washington restaurant from former Distrito chef de cuisine Tim Spinner and former Distrito bev manager Brian Sirhal (424 S. Bethlehem Pike), is aiming to open in early 2011. Get a quickie preview of some of Spinner's menu items after the jump. Creekstone Farms NY strip with chipotle marrow and parsley chimichurri?! Sounds crazy good. Guacamole with seasonal fruit including pomegranate, red apple, and Asian pears Ceviche Verde - (All elements on the plate are green) Hiramasa served sashimi style with sliced kiwi, spicy galia melon vinaigrette, diced jalapeno and chives, topped with lime sorbet and lime zest Baja Fish Taco - Tempura battered grouper served on a flour tortilla with chipotle coleslaw, slice of avocado, topped with radish rounds Wild Mushroom Taco - Oyster, royal trumpet and crimini mushrooms cooked a la plancha, served on a corn tortilla, truffle potatoes and topped with a green asparagus salad that has been tossed in a lemon vinaigrette Creekstone Farms NY Strip Steak - served with chipotle bone marrow, creamed spinach, topped with a parsley chimichurri Beef and Garbanzo Stew - Red chile beef broth served with slow braise short ribs, chayote, serrano chiles and wild greens Mole Poblano - Pan roasted organic chicken breast topped with mole poblano and served with sweet plantain rice Papas con Mole - Kennebec potato fries, topped with mole poblano, Mexican crema, and queso fresca

For those looking for a place other than Grandma's plastic-covered couch to loosen your belt buckle on Thanksgiving, hit up one of the bars open and pouring on Thursday. If you know of any more, please speak up in the comments and we'll add to the list. South Philly Tap Room (1509 Mifflin St.) will be open from 6 p.m. to 2 a.m. Kitchen open till 1 a.m. Varga Bar (941 Spruce St.) opens at 7 p.m. for food and drink. Devil's Den (1148 S. 11th St.) will be open at 7 p.m. and will be tapping a keg of aged 2009 Southern Tier Pumking and 2010 Pumking. A limited food menu will also be available. The P.O.P.E. (1501 E. Passyunk Ave.) will be open at 6 p.m.; limited food menu, but full-on beer selection (Mad Elf!). 12 Steps Down (831 Christian St.) opens at 7 p.m. The bar at London Grill (2301 Fairmount Ave.) will be serving simultaneously with the restaurant's Thanksgiving buffet feast, from 2 to 7 p.m. Bishop's Collar (2349 Fairmount Ave.) will open around 7 p.m. No food.

Metropolitan Bakery has debuted a new line of popcorn just in time for the holidays. A "sophisticated take" on caramel corn, they're made by hand using all-natural high-quality ingredients.  The popcorn is available is three flavors: bourbon-infused, stout with smoked almonds and spicy peanut butter. The weekend before last, we had the great pleasure of attending the fourth annual Green Meadow Farm dinner at James (824 S. Eighth St.). Organized almost exclusively around products sourced from Glenn Brendle's operation in Gap, Pennsylvania (about an hour west of the city), the meal was a celebration of Green Meadow, the family-run Lancaster County farmstead that supplies numerous top-notch Philly restaurants with herbs, vegetables and other produce. (In addition to Jim and Kristina Burke's James, Green Meadow supplies the likes of Barbuzzo, White Dog, Bar Ferdinand, Zavino, London Grill and quite a few more.) The entire Brendle clan was in attendance for the evening, so naturally, much of the food was served family-style on big fork-it-over-sis platters — something you're not going to catch at the refined James all that often. Jim Burke has a reputation as one of the most meticulous chefs in the city (read Adam Erace's recent description of his art-project-on-a-plate Venus' Jewel Case), and while tons of work went into this multi-course feast, the grub on this night had a certain homey zeal to it — roll-your-sleeves-up good, no biggie if you spill something on yourself (I did, but then again I always do). All in all, an immensely fun, hospitable and singular experience that I was fortunate to be a part of. What we ate, in order: - Cream of rutabaga soup with mustard-marinated mushrooms - Malabar spinach-stuffed mezzaluna pasta with brown buter and pecorino di fossa - Hubbard squash risotto topped with 30-year-aged balsamic vinegar - Mains — apple/chestnut-stuffed capon; roasted whole Pocono mountain trout; housemade fennel sausage - Vegetables — bacon-braised collards; pan-roasted heirloom cauliflower; roasted sweet onions; parsnip purée; cardoon gratinata* - Dessert — quince-pear almond tart; carrot-walnut pudding cake; wildflower honey and vanilla ice creams * This was my first time trying cardoons, basically big ol' thistles that look like prehistoric celery and taste a bit like artichokes (they're related). I copped a bunch over the weekend — also sourced directly from Green Meadow — from Green Aisle Grocery. If anyone has any suggestions on how to cook these bad boys, I'm all ears!

Everything about this dinner was incredible.  I still think about the rutabaga soup, the cardoons, and the roasted onion.  The food and service was still very much James caliber but it was so inviting to be served family style while sitting in large groups.  It was such a comforting meal, thanks so much to the James staff for a great time.  Hope to see you next year!

We have started joking that Chef Burke has created a cardoon craze! Many have asked us how to prep & prepare this interesting veg, well here goes. May you all enjoy a delicious & safe Thanksgiving.

Cardoon Gratin
rinse stalks, trim leafy edges
Cut into 1/2" & soak overnight in VERY salty water
Drain, blanche until al dente in VERY salty water
Sweat thinly sliced onions in generous amount of butter until soft (NO COLOR) add a couple of chopped salted anchovy then add the cardoons, cover with cream, bring to a simmer & continue to simmer under a parchments lid until extremely tender. Finish with lemon zest, season to taste. Put a generous layer in a gratin dish top with parmiggiano reggiano cheese and broil until golden brown

We cheated a tiny bit.  About the cardoons, I've tasted and grown them and I wasn't all that fond.  So, I grow artichokes instead and harvest the leaf stalks as well.  No more boiling in all those changes of water.  They are so lovely, I eat them raw like celery!  Just string them slightly, cut as you like and cook like celery.  They're great creamed,  Guten appetit!

If you're in need of some very, very fresh bread for this Thanksgiving, note that Michael "Challahman" Dolich's excellent Four Worlds Bakery (4624 Woodland Ave.) will be open on Thursday from 8 a.m. to noon. He'll have all sorts of rolls, breads, bagels and, of course, challah available for purchase.

We recently posted about Sticks & Stones' purported plans to open the night before Thanksgiving after something like two and a half years of work. It's true, it's true, it's really true, confirms owner Nick Miglino. Stop by tomorrow evening (1909 E. Passyunk Ave.) to check out the space and try some samples off the menu. S&S will be soft-open — "open up foreal, somewhat," as Miglino puts it — on Friday and Saturday, and will host an industry night Sunday. Then Monday, "open up foreal." We salute you, Mr. Miglino! [...] Though we reported last week that the long, long, long-awaited Sticks & Stones (1909 E. Passyunk Ave.) would be debuting this long holiday weekend, we decided that a bit of visual confirmation couldn’t hurt, so we popped in yesterday evening. (OK, we also just wanted a beer.) Nick Miglino’s P’yunk Ave operation is indeed rolling, and was packed pretty tight on Sunday for an industry night special. They had lots of nice craft beers on tap, all priced at $5.50 (Lefthand Sawtooth, Weyerbacher Harvest, Flying Dog Raging Bitch, Bell’s Two-Hearted, Stone Arrogant Bastard, etc.), and there’s also a nice large-format bottle list. Though the menu was not live for yesterday’s festivities (they instead were putting out gratis snacks for the in-the-biz guests), we snagged a shot of the internationally themed offerings, which you can check out after the jump.
