T for Temple U. , U-niversity... TACOS! Chris Allen has just pulled up Chris' Taco Stand on the corner of 12th and Norris, next to the Engineering Building and across from the Boyer College of Music/Tyler School of Art on Temple’s campus. An Owl alum, Allen polished his cooking chops at the French Culinary Institute before working at Tinto. Dude also knows his cheese (that is evident by the awesome queso fresco he grates over your taco before handing it over) and has worked as a cheesemonger at Di Bruno Bros. here and Murray’s Cheese Shop in NY.  Chris’ shares a kitchen with a stable of Philly’s favorite trucks, including Honest Tom’s, Renaissance Sausage and the upcoming Far From Home. Chris’ menu is super straightforward, flavorful and cheap. Tacos are $2.50 each or $6 for three; quesadillas for $5 and burritos are $6.  Sides top out at $2.50 for black beans and rice, and Mexican sodas are yours for 2 bucks.  (Check out the full menu after the jump.) When WHYY announced in September that it was yanking A Chef’s Table, a locally produced public radio program with Jim Coleman, its host didn’t run screaming from the station. The corporate chef of Blue Bell Country Club and Normandy Farm, one-time exec chef at the Rittenhouse Hotel and on-air personality for WHYY’s Healthy Flavors got another gig that I told you about recently in Icepack — as exec chef of World Café Live (3025 Walnut St.), plus its due-in-2011 Delaware outpost at the Queen. "With the opening of WCL at the Queen scheduled for April 2011, we took the opportunity to do a comprehensive search for the kind of food and beverage leadership that Jim brings with him," says Hal Real, founder/president of World Café Live. “It’s an exciting chance to take all our offerings in Philly and soon in Wilmo to yet an even higher level, including our ever-growing offerings of fun food-centric events." Coleman agrees — he’s at the restaurant/music venue now. But pragmatic as he may be, he’s got some lingering sadness about losing A Chef’s Table. Mention the chance of getting on radio at WXPN, the radio brother and next-door neighbor to WCL, and Coleman says that challenge wasn’t part of his reason for taking the gig — but he’d be very interested. He's a big fan of the station, and sees food as having "one degree of separation from music and art," so synergy is very much part of Coleman’s long-term plans. The chef can’t pretend to know everything about the music business, though he's already brewing up ideas for pre- or post-gig events. "I may even find out what an artist’s favorite dish was growing up, bring them on stage for a Q&A or taste test and see what comes up," says Coleman. "Maybe they’ll tell me how their mom didn’t make it like that, or how she made it 10 times better." He’s not saying yet what his menu ideas are — all he shares is that the the food should be fun and not as life-or-death as it can become in the culinary world. “That’s the cool thing about WCL’s employees," says Coleman. "Everyone one here is day-one enthusiastic. If the food can be as fun as both the workers and fans are, it’ll be a whole different kettle of fish.”

Next week, sandwich artiste Peter McAndrews heads to Sicily. Not for vacation, but for research for a Sicilian-flavored ristorante he has planned for January. "It'll be the only real Sicilian restaurant in town. I'm really excited about it," says the Modo Mio and Paesano's exec. He's not set on a name but likes Crescendo and 13, "actually a lucky number in Sicily, and I was born on Friday the 13th." Native New Yorker (and Siggi by blood) Damien Messina is already lined up as the forthcoming spot's chef; he and McAndrews met in Italy 15 years ago and have been friends since. Crescendo (or 13) will be housed in the space currently occupied by Paesano's, which will move two blocks down to the old Bebe's BBQ bricks. And that's not all in McAndrews news. The chef is also planning a pop-over to Naples to perfect his pizzaiola abilities. "Making pizza and bread is what I really love. Next year I want to open the best pizzeria in the city."

I hope they get the upstairs space going at the Bebe's location.  There is very little room for seating at the downstairs!

On Tuesday, Adam Erace shared the interesting news that The Khyber (56 S. Second St.), which was earmarked as a new-look izakaya by its owners back in August, would instead go Southern under the watchful food eye of chef Mark McKinney, who runs the show at Royal Tavern and Cantina Dos Segundos. Here's a PDF of the new menu, which will go live in full on Thursday, Nov. 18. Starting this coming Tuesday, Nov. 9, the Khyber Pass Pub (as it'll now be known) will run a preview version of the menu, which includes eats like fried chicken, gumbo (above), fried oysters, Carolina-style BBQ pork, fried green tomatoes,  po'boys (on Leidenheimer rolls) and even a big ol' New Orleans-style muffuletta sandwich. Daily specials, too. The Khyber Pass Pub will be open every day from 11 a.m. to 2 a.m., with food served until 1 nightly.

On December 1, downtown girl Joan Verratti, the first licensed female distiller in the country since Prohibition, begins brewing batches of her Pollyodd Limoncello in Point Breeze. “Pollyodd is an Italian colloquialism,” for tying one on, explains Verratti’s life and business partner, Tom Cavaliere. “I remember my dad would come home and say, ‘Jesus Christ, what a pollyodd I put on last night.’” Awesome. The all-natural, preservative-free—just lemons, water, sugar and grain alcohol in the limoncello, for example—digestivi they’re distilling on 25th Street could certainly help you get your pollyodd on. Verratti and Cavaliere have perfected their recipes over the last five years and total 18 flavors of clear and creamy libations in their line. Verratti treated us to an undercover tasting earlier today, tipping shiny ribbons of water-based lemon, lime, orange and chocolate ‘cellos from old Crown Royal bottles. Silk-smooth, bright and sweet (but not too sweet), they’re the real deal. Expect to see them in PLCB stores sometime in 2011, with part of the proceeds benefiting a scholarship fund for urban students in memory of Verratti’s son, Thomas Joseph.

Passyunk Ave.) just sent over the new fall dessert menu that makes its debut this week at the South Philly BYO she heads with Lee Styer and Tory Keomanivong. Prawlucki's addictive "cannolis" return, this time tinged with butternut and a cinnamon-caramel marscapone. Fathom Seafood House (200 E. Girard Ave.) is just about ready to open in Fishtown (check out our very early word on Fathom back in the summer). Mike Stollenwerk, of Little Fish and fish fame, is at the head of the sustainably sourced raw bar and seafood-centered gastropub. The menu will feature updated comfort food including lobster grilled cheese, swordfish schnitzel, cod pierogies and "Fathom Fries" topped with crab, spiced crab gravy and cheese curd. (Join us in crossing our fingers for some whole belly clams.) The 24-seat concrete topped bar will have a strong local presence with 10 beers on tap and over 40 bottles and cans. Fathom will be open seven days a week, with happy hour from 4 to 6 p.m. from Monday to Friday and 12 p.m. to close on Saturday and Sunday. UPDATE: Food and beer menus, after the jump!

- I love fall foods, especially all varieties of squash. Eatocracy shares directions on on how to roast a perfect  butternut squash, plus some helpful hints. My helpful hint is add garlic. Always add garlic. - Speaking of butternut squash, Bon Appetit gives a run down on all things butternut(ty), including how to buy, how to use, how to store and a list of drool worthy recipes. Heads up/warning to my  vegetarian family and friends: I will be making this soup, and you will be tasting it. And hopefully loving it, too. - UWISHUNU shares a Wall Street Journal piece on 13 different ways to use pumpkins, aside from carving or turning into a pie. Jose Garces' pumpkin quesadilla sounds delicious and simple enough for even the most inept home chef (ahem, cough) to make. - OK seriously Sixpoint, are you hiring? What do I have to do to be able to partake in your awesome meals? This Pumpkin Panna Cotta with Wort Syrup is not only very innovative but sounds and looks  delicious as well. I can answer your phones, sweep the floors, usher drunks out, whatever it takes. - Pumpkin waffles,  pumpkin salad with pine nuts & pecorino,  spiced butternut squash & apple soup, butternut squash risotto ... oh Oprah, what can't you (and your team) do?! All of these "fall recipes to savor" look and sound amazing.

Esmon's Sazerac (much larger in person)
Drinking at Catahoula (775 S. Front) just got a whole lot better with the arrival of Phoebe Esmon, el presidente of the Pennsylvania chapter of the U.S. Bartenders' Guild and most recently, head swizzler at Chick's Cafe (614 S. Seventh St.). Esmon came to Cat' last month — after we already reviewed, grrrr! — and drops her new cocktail list on her thirsty subjects tomorrow. The menu is divided into three categories: Know your Classics (Pimm's Cup, Sazerac, etc.), the Modern Library (modern recipes from other industry folk) and Dear Diary (Esmon originals). Could we be more excited to sip on her Garden District, a Bourbon-based elixir flavored with maple and fig? No ma'am. See the entire list here.
