Philly's Steven Grasse and his brand consultancy Quaker City Mercantile just got together with one of his longtime clients, the family-owned William Grant & Sons distillery, for a most unique partnership. The makers of Glenfiddich have acquired Grasse's Art in the Age of Mechanical Reproduction brand, its Pennsylvania folk recipe-based ROOT liquor and new spirits in the works, such as SNAP. (Like ROOT, SNAP will be inspired by local history and area farm products — Pennsylvania Dutch black strap molasses ginger snap cookies.) In the larger sense, though, Art in the Age revolves around a "a form of farmers market ethos that appeals to consumers' desire to move away from the corporate and back to a more local, community-orientated culture." That green ideal has been part of Grasse's big picture since he founded AitA in 2006. Simon Hunt, Northern American managing director for William Grant, said in a release that his company sees the potential for ROOT and the additional AitA variants to be "game-changing spirits, in the same way as Sailor Jerry Rum and Hendrick's Gin redefined their categories." (Grasse, for those keeping score, spearheaded/marketed the presence of both brands in the States.) "It's a great agreement for both me and the Grants," says Grasse. "I can keep launching my crazy ideas in the marketplace. If they show any signs of life, the Grants will help me make them bigger."

Weird combination of flavors today. It's the start of Philly Beer Week 2010, it's National Doughnut Day and it's Oyster House's first birthday. As far as Beer Week goes, you already know what to do — check out our PBW package and all our coverage on Meal Ticket. For the hole-y holiday that is National Doughnut Day —participating Dunkin' Donuts locations are giving out one free doughnut with the purchase of any beverage. And Sam Mink's 12-month-old shuckerie (1516 Sansom St.)? They're offering dollar oysters all day (11:30 a.m. to 11 p.m.), and will tap a firkin of Stoudt's excellent Double IPA at 4 p.m. to honor — you guessed it — National Doughnut Day Philly Beer Week.

Four Corners Management's Noche (1901 Chestnut St.) has a sleek, grown-up new look all of a sudden. "The place has taken a beating over the last few years," says 4CM's Mark Fichera. "It was due for an updating." They've revamped everything, from the lighting and booths, tables and banquettes to the color scheme and floor finish. No more Southwestern animal hide-type seating throws. The food and drink remains the same.

Just touched base with chef Mike Stollenwerk of fish to talk a bit about his upcoming project, Fathom Seafood Bar, which is up for a fall opening. At roughly 1,000 square feet, Fathom — at 200 E. Girard, the corner of the Avenue and Shackamaxon — won't be huge; all the better to place the focus on a 22- to 24-seat bar, plus some picnic table-inspired high-tops that'll accommodate an additional 20. (Outdoor seating for 40 to 50 eventually.) The food and drink will be down-market compared to Stollenwerk's excellent sit-down fish — picture a bar menu of 10 to 12 items, plus sides. He'll do stuff like lobster grilled cheese, crab fritters, coconut curry mussels, smoked-fish pierogies, and classic raw bar eats (oysters, clams, shrimp cocktail, marinated mussels) priced by the piece/ounce, allowing guests to mix/match their own platters. Stollenwerk plans on stocking his draft tower with lighter beers — think French white ales and the like — to complement the seafood-heavy menu. You won't see a lot of meat — "If you want a burger, there's 18 places within a block to get one," he says. The chef also wants to do Monday crab nights (pair the hard-shells up with a large pounder selection) and a kegs 'n' eggs brunch on Sunday mornings. The deal for Fathom happened way fast. "I've always wanted to do a killer raw bar," Stollenwerk says. "I was at Kraftwork one night when they first opened, and thought [Fishtown] might be a great neighborhood for it. It was Monday at 11 at night, and Fishtown was buzzing, people walking around everywhere." He came back, saw that Fathom's space was for rent (it was formerly an art gallery), and signed a lease the next day.

A tipster wrote us last night that Apamate, chef Ane Ormaechea's tapas joint, has closed up shop. Swung by the spot this morning to find that the tables and chairs have been cleared out of the dining room; phone is disconnected. We've contacted Ormaechea and will update here with any info we hear. UPDATE: "Very proud of my work there," says Ormaechea in an email to Meal Ticket. "It was an amazing spot and an immense learning experience for me." The chef says she's got something new in the works but isn't ready to talk about it just yet.

Police have confirmed the identity of a female found dead this morning on the 1200 block of Fourth Street in Northern Liberties, and it's tragic news for the local restaurant community. The Inquirer reports that Sabina Rose O'Donnell, an apparent victim of foul play, was discovered this morning. P.Y.T. owner Tommy Up confirms that O'Donnell was an employee; he is closing his Piazza restaurant this evening. Our thoughts and prayers are with O'Donnell's family, friends and coworkers.

She was the darling of the Philadelphia Nightlife scene. She is loved and will never be forgotten. I only wish I had gotten to know her better. RIP

Peter Woolsey of Bistrot La Minette recently told us that the next collaborative chef dinner he was participating in — the July 2009 pig dinner and April 2010 French bistro dinner were both big hits — would be a doozy, and the dude was not lying. A trusted Meal Ticket tipster sends in this card teasing a July 1 NINE-CHEF dinner at Zahav with an apparent JERSEY SHORE theme. Amazing. Lineup and promised dishes after the jump; more details soon. UPDATE: Forgot to mention — the boardwalk food-themed dinner will also feature a Journey cover band. Yes. UPDATE [03june10]: Just got off the horn with Zahav's Michael Solomonov, who shared some more details about the evening. The format of this chef's dinner is going to differ greatly from the past events at Mémé and Bistrot La Minette. "We're going to be doing it passed hors d'oeuvres style," says the chef. "Just get a ticket and eat whatever you want. There'll be drinks concession-stand style ... 'Beer here! Beer here!'" Solomonov adds that we should all expect the unexpected from each chef's offerings — his "pizza," for example, will likely be a tomato and pepper stew and merguez-stuffed calzone, and Woolsey of Bistrot La Minette teases that he might be putting together a foie gras popiscle. Admission is $25 and Solomonov recommends buying tickets in advance by calling the restaurant. So in. I love how each item is appropriate to the chef or his modus operandi .... like charcuterie master Andrew Wood in on hot dogs, and Mike Solo turning pizza out of his wood-burning oven instead of laffa.

These thing are always so freaking worth it.
