Paul Trowbridge, veteran of Alison at Blue Bell, Moriarty's, Vega Grill and Blue Horse Tavern, has taken over the kitchen at Devil's Den (1148 S. 11th St.) from Alex Urena, who came on about a year ago from R2L and has reportedly moved back to New York due to personal issues. Peep DD's latest menu, launching today, after the jump. Also going down tonight at Devil's — Brooklyn's Sixpoint is kicking off the Philadelphia premiere of its "Mad Scientist Series," which features the brewery's peculiar draft-only creations. Tonight from 5 to 7 starting at 7, you can cop drafts of their Spelt Wine, a 9.5 percent ABV barleywine-style beer for which half the barley for the brew was replaced by spelt. UPDATE: Quick clarification: Sixpoint's Spelt Wine will be tapped at 7 p.m. And Devil's will offer their half-price happy-hour draft deal from between 5 and 7, as per usual. Sorry for the confusion.

It's funny, b/c I was so pissed when Alex took the duck fries off of the menu when he came aboard, but now I'm pissed that Paul has taken the crab ravioli off his newish menu.  Whatcha gonna do.  The duck fries are heaven on a plate and I look forward to scarfing them down with some kick ass beer.

On Dec. 5, Food Network's Iron Chef America aired its "Battle Sparkling Wine" episode, one that featured Philly's Jose Garces edging out Mike Lata of Charleston's excellent FIG 70 to 67 in a bubbly-based clash. (We ate at FIG recently and can confirm that Lata, a James Beard winner, was a more-than-formidable opponent for our guy indeed! Eater has clips.) Now, for the first time since landing the Iron Chef gig, Garces is making one of his multi-course meals available to the general public. Who you tryin' to get crazy with, ese? Don't you know Levin is Loko?
Next Monday, Dec. 13, chef Matt Levin of Adsum (700 S. Fifth St.) will cook a four-course dinner based around Four Loko, the controversial caffeinated 12-percent-alcohol energy beverage that's all the rage with those goddamn crazy kids. *shakes cane* Levin floated the idea of a Four Loko-themed meal on Twitter as a joke, but the people spoke: "Within 15 minutes, I got 37 responses that peeps wanted in," says the chef. "Sometimes your worst decisions are your best." Levin began stockpiling Loko after he heard that that Phusion Products, which produces the drink, was coming under fire from health officials (apparently, combining the ABV of a high-proof beer with caffeine, taurine and guarana is potentially deleterious). The beverage, in its current form, will soon be no longer, all the more reason for Loko boosters to hit up Levin's four-course, drink-paired feast: - Moroccan Lamb ‘Sausage and Peppers’ paired with Adsum's "Loko Yoko" cocktail - "BBQ Picnic," featuring Loko pearls and pickled watermelon rind, paired with Lemonade Loko - Vanilla Pain Perdu with Loko slushy and gelee, paired with Watermelon Loko - Loko Pate de Fruit, paired with Fruit Punch Loko Adsum's Four Loko dinner will cost $35, and there are two seatings: 6 and 8 p.m. Call 267-888-7002 to reserve.

On Monday, Dec. 13, chef Sam Jacobson of Lansdowne's Sycamore and chef David Ansill of Ladder 15 — both of whom count themselves among Han Dynasty's most loyal regulars — will hop into Han Chiang's kitchen (108 Chestnut St.) for a special collaborative dinner. Scheduled to kick off at 7 p.m., the dinner will feature seven courses for $40 a head. Though the menu is not solidified just yet, both Jacobson and Ansill will be preparing Western-style dishes under the influence of the Sichuan ingredients and techniques that rule at Chiang's restaurant — "Chinese-izing American food," and not the other way around. Keep in mind that eats like Sichuan-spiced salmon carpaccio, tea-smoked ribs, Sichuan peppercorn ice cream with sriracha caramel may make an appearance at the feast, which will be served to diners both family-style and individually plated, depending on the dish. Call Han Dynasty at 215-922-1888 to make reservations, and be sure to specify that you're corraling seats for the collab.

The weekend before last, we had the great pleasure of attending the fourth annual Green Meadow Farm dinner at James (824 S. Eighth St.). Organized almost exclusively around products sourced from Glenn Brendle's operation in Gap, Pennsylvania (about an hour west of the city), the meal was a celebration of Green Meadow, the family-run Lancaster County farmstead that supplies numerous top-notch Philly restaurants with herbs, vegetables and other produce. (In addition to Jim and Kristina Burke's James, Green Meadow supplies the likes of Barbuzzo, White Dog, Bar Ferdinand, Zavino, London Grill and quite a few more.) The entire Brendle clan was in attendance for the evening, so naturally, much of the food was served family-style on big fork-it-over-sis platters — something you're not going to catch at the refined James all that often. Jim Burke has a reputation as one of the most meticulous chefs in the city (read Adam Erace's recent description of his art-project-on-a-plate Venus' Jewel Case), and while tons of work went into this multi-course feast, the grub on this night had a certain homey zeal to it — roll-your-sleeves-up good, no biggie if you spill something on yourself (I did, but then again I always do). All in all, an immensely fun, hospitable and singular experience that I was fortunate to be a part of. What we ate, in order: - Cream of rutabaga soup with mustard-marinated mushrooms - Malabar spinach-stuffed mezzaluna pasta with brown buter and pecorino di fossa - Hubbard squash risotto topped with 30-year-aged balsamic vinegar - Mains — apple/chestnut-stuffed capon; roasted whole Pocono mountain trout; housemade fennel sausage - Vegetables — bacon-braised collards; pan-roasted heirloom cauliflower; roasted sweet onions; parsnip purée; cardoon gratinata* - Dessert — quince-pear almond tart; carrot-walnut pudding cake; wildflower honey and vanilla ice creams * This was my first time trying cardoons, basically big ol' thistles that look like prehistoric celery and taste a bit like artichokes (they're related). I copped a bunch over the weekend — also sourced directly from Green Meadow — from Green Aisle Grocery. If anyone has any suggestions on how to cook these bad boys, I'm all ears!

Everything about this dinner was incredible.  I still think about the rutabaga soup, the cardoons, and the roasted onion.  The food and service was still very much James caliber but it was so inviting to be served family style while sitting in large groups.  It was such a comforting meal, thanks so much to the James staff for a great time.  Hope to see you next year!

We have started joking that Chef Burke has created a cardoon craze! Many have asked us how to prep & prepare this interesting veg, well here goes. May you all enjoy a delicious & safe Thanksgiving. 

Stay hungry,

Cardoon Gratin
rinse stalks, trim leafy edges
Cut into 1/2" & soak overnight in VERY salty water
Drain, blanche until al dente in VERY salty water
Sweat thinly sliced onions in generous amount of butter until soft (NO COLOR) add a couple of chopped salted anchovy then add the cardoons, cover with cream, bring to a simmer & continue to simmer under a parchments lid until extremely tender. Finish with lemon zest, season to taste. Put a generous layer in a gratin dish top with parmiggiano reggiano cheese and broil until golden brown

We cheated a tiny bit.  About the cardoons, I've tasted and grown them and I wasn't all that fond.  So, I grow artichokes instead and harvest the leaf stalks as well.  No more boiling in all those changes of water.  They are so lovely, I eat them raw like celery!  Just string them slightly, cut as you like and cook like celery.  They're great creamed,  Guten appetit!

Jeff Michaud of Osteria (640 N. Broad st.) has sent over the menu for the "Sunday Supper" he'll cook with chef Jonathon Sawyer of Cleveland's Greenhouse Tavern. The five-course dinner (some stuzzichini before the starters, too) scheduled for this coming Sunday, Nov. 28, at 6 p.m., and a seat will run you $130, all-inclusive. (Spit-roasted veal belly sounds like something we possiblypotentiallymaybe would like to eat.) Tix here.

CP food critic Adam Erace's Green Aisle Grocery (1618 E. Passyunk Ave.) is about to begin carrying cookies from David Chang's Momofuku Milk Bar up in NYC. Yes, including the (in)famous Compost Cookie! From GAG's blog:
Pastry Chef Christina Tosi is best know for her Compost Cookie chock full of pretzels, potato chips, ground coffee beans, oats and butterscotch and chocolate chips. We’ll have those, sold by the single and in pretty six-count tins (great gifts!), as well as the rest of Milk Bar’s cookie line: Blueberry and Cream, Chocolate-Chocolate, Peanut Butter, Corn and Cornflake-Marshmallow.
The first shipment should be landing on P'yunk tomorrow.

Mark Coates, of the late Bebe's Barbecue, tells Meal Ticket he's come on as the chef at Fergie's Pub (1214 Sansom St.). Coates says he'll have complete control over the approach of the menu at Fergie Carey's namesake establishment, and plans on (of course) making it a 'cue-centric operation. More details soon.

Mark's BBQ is literally the best you will EVER eat. Regardless of where you are in the country, This is the real deal from a real pit master.  It really does not get better.
