This summer marks the second for Ultimo Coffee, the caffeinated half of Newbold’s scrappy Ultimo/Brew (1900 S. 15th St.), as well as the reprisal of their perfecto Caprese baguette. "As soon as local tomatoes were available, the sandwich went back on the menu," says owner and coffee swami Aaron Ultimo, who served as judge at the most recent Thursday Night Throwdown barista competition. Pairing tomatoes with fresh mozzarella and basil is nothing new, but layering it on a split Four Worlds baguette takes the Italian-flag-colored trio to another plane. "People say bread makes a sandwich," says Ultimo. "In this case, it’s really true." Baker Michael Dolich’s slender roll possesses that elusive balance of exterior crunch and inner chew, an ideal foil for the sliced Lancaster tomatoes, petals of Claudio mozzarella and torn basil from Ultimo’s back yard. So which of the cafe’s rotating Counter Culture coffees make the best match for this $6 summer lunch? “An iced Finca el Puenta from Marcala, Honduras has sweetness to counterbalance the tart snap of the sandwich," says Ultimo. "It’s nicknamed the 'Purple Princess' for its plum, grape and lavender notes.” Icing the brew according to the Japanese school — coffee's brewed fresh at double strength in a press-pot and poured hot directly over ice — "intensifies all that sweetness and nuance.” Eat this immediately.

Philadelphia’s coffee cognoscenti held its monthly Thursday Night Throwdown (TNT), a fast-paced latte art competition, on July 22 at Spruce Street Espresso (1101 Spruce St.), and Meal Ticket was there to take in the event in all of its pulled, pressed and caffeinated glory. This latest Throwdown brought together 28 competitors to try their hands at winning the monthly title and championship medal. Lovers and Madmen, Ultimo Coffee, Milkboy, Bodhi, 1 Shot, Gryphon Café, Café Clon and the host café were among the shops that tasked their top baristas with representing. TNTs started in Atlanta and have quickly spread up the East Coast, bringing together local, regional and national coffee communities. The Throwdown itself is a tournament bracket-style contest where one barista is pitted against another behind the espresso machine — they each get 3 minutes to prep their espresso and milk, and one free-hand pour to demonstrate their loftiest interpretation of latte art. The meticulous judging criteria includes:
Balance and symmetry: dividing lines are clean and even Color infusion and definition: the contrast between the whiteness of foam and the darkness of the crema. and the intention of the design is obvious and clear Use of space: the design fills the cup in an appropriate and pleasant way. The design neither crowds the cup, nor leaves it feeling empty or unfinished. there is harmony between the size of the cup and the size of the design. Overall impression: drink is free of spill marks and cup is appropriately full of liquid. General aesthetic appeal and subjective appreciation.

"Mid-Atlantic Barista Mom" Betty Ortiz of Spruce Street was a perfect host for the floating contest, which was sponsored by roasters Counter Culture and presided over by judge Aaron Ultimo of Ultimo Coffee (top pic, light blue shirt); he ultimately decided whose cups moved on from round to round. This time, Jonathon Amos of Bodhi Coffee (410 S. Second St.) won top honors. It's serious stuff — the winner walks away with cash and coffee swag in addition to bragging rights. Above all else, though, it serves as an opportunity to hang with some of the most passionate, friendly food/drink people in the city. August’s Thursday Night Throwdown will be held at Ultimo Coffee at 15th and Mifflin; keep an eye on TNT's site for more info. Check out video of the latest TNT below, via ComplexEspresso:

Jean-Luc Fanny's Café L'aube, which the Ivory Coast native opened at 1512 South close to two years ago, is growing north, with a second location at 1631 Wallace Street. Its tentative opening is slated for "summer 2010." (Hey, that's right now!) More details soon; in the meantime, read Trey Popp's March 2009 rave about Fanny's specialty. Crepe lovers of Fairmount, rejoice! (h/t @FairmountNews) UPDATE [3:48 p.m.]: Just touched base with Fanny to grab a couple more details. This new space will be two rooms, and bigger than original. Same exact approach as the original café, with the exception of the waffles — here they'll be served Liege-style, which is denser/chewier than the Brussels style he presses on South. Fanny is aiming for an August 15 opening.

Nook Bakery and Coffee Bar (15 S. 20th St.), which we told you about in Feeding Frenzy last week, is still getting its bearings on 20th and Ranstead, but owners Michael Caro and Edna Cruz are quickly hitting their stride as far as the coffee and baked-good beats go. Nook, a far more spacious realization of what was their Walnut Bridge Coffee House, is brewing two types of coffee — One Village out of Souderton and Gimme! out of Ithaca — plus some killer espresso from Seattle-based Caffé Vita. Caro's also experimenting with brewing methods aplenty for heat-beating cold drinks, including Japanese iced coffee (aka hot coffee hand-brewed over ice, which results in a gentler end product) and a more traditional double-brewed rendition that packs a dark-roasted wallop. Caro encourages coffee heads to check out his pourover bar, but for folks without much time to spare, they're brewing fresh French press java and keeping it in hoppers for grab-and-go convenience. They've got an elaborate, so-serious multi-step water filtration system installed, as well (last pic); Caro says it fascinated the city Health Department inspector (in a good way). Cruz now has the room to back everything she wants in-house  — that includes sweets like scones, cookies, brownies and bars, plus savory treats like quiche, veggie tarts, bread puddings and the like. Don't miss her strawberry/rhubarb muffins. Nook's open Monday to Friday from 7 to 6 and Saturday and Sunday from 8 to 5.

Michael Caro, who along with his wife Edna has moved Walnut Bridge Coffee from 2319 Walnut to the corner of 20th and Ludlow, says he hopes to have his new space open sometime in the next week. Nook Bakery and Coffee Bar, as it'll now be known, sits at at 1,600 square feet, close to twice the size of Walnut Bridge, which they ran for five years; it'll allow for more elbow room for customers in addition to an expanded in-house baking operation. Walnut Bridge used Illy brand coffee, but Caro says he'll now source beans from the Souderton-based One Village as well as New York's Gimme. They'll feature a "brew bar" where customers can choose from an international variety of unique single-origin beans that will be ground and brewed to order; for those in a hurry, though, Nook will also feature fresh French press fuel on hand. An elaborate four-stage water filtration system will allow Caro to tweak out municipal H2O for optimal brewing results. Edna has built up a reputation for her great bread puddings (vanilla, banana chocolate, strawberry, etc.) — those'll be available, as well as sweets like brownies and lemon bars. For lunch, they'll avoid going the sandwich route (Center City competition is too saturated, Caro believes) and focus on savory baked dishes like quiches, scones (bacon/chive/white cheddar is one option) and casseroles.

Chhaya Café is the name of the biz taking over what was Le Petite Croissant at 1823 E. Passyunk Avenue. During the week, they'll operate as a coffee house, serving sandwiches, salads, fresh-baked bready fare and some unique waffle preparations — spicy cornbread, a pulled pork-topped option and black-and-white marble cake waffles are just three examples. On weekends, owner Brett Shangold says they'll serve Saturday and Sunday brunch, working off a menu that'll feature their waffles in addition to other brunch dishes. Friday and Saturday nights, they'll do cichetti for dinner — that's the Venetian small-plate service we first caught wind of this past winter thanks to Andrea Luca Rossi of Rittenhouse's Cichetteria 19. No solid opening date just yet but we'll update here as we learn more. UPDATE [13july10]: Chhaya hopes to open its doors in the first week of August, according to Shangold.

Free coffee alert! Douglas Witmer and Daniel Thut's Powelton Village Green Line Café (3549 Lancaster Ave.), which opened three years ago, is finally fully renovated — thanks to a financial assist from the University City District, the West Philly coffee dudes (they've got two other shops) have restored a streetside plate-glass window in the space and also commissioned a 30-foot Green Line mural on the side of the building. This Friday, June 11, from 4 to 6 p.m., stop by to check out the grand reopening of the café — they'll pour gratis fair-trade coffee (sourced through the Independents Coffee Cooperative), plus an edible spread of eats off the Green Line grab-and-go menu. We first alluded to 1 Shot Coffee's expansion plans back in February, but now the project is coming into focus a bit more. Owner Melissa Baruno tells Meal Ticket she's aiming at Sept. 1 to move her five-year-old café from Liberties Walk to a multi-level space on American Street (formerly American Street Café). On the ground floor, she'll have a custom-built espresso bar (literally a bar, with 12 seats) armed with a pourover setup and iced coffee on tap; she wants to hold cuppings, or coffee tastings, once a week. A full kitchen will allow Baruno to offer a vegetarian-friendly, full-on seasonal salad menu put together with locally grown organic ingredients. 1 Shot has served Stumptown coffee since January of this year, and will continue to brew their beans, including a proprietary blend the Portland, Oregon roaster developed specifically for Baruno's shop. On the second floor of the new café, there'll be a glass-enclosed herb and lettuce garden, a user-friendly community table for meetings and study and a wall dedicated exclusively to work by Tyler School of Art students. Baruno says she plans on organizing movie nights, acoustic performances and local artsy-crafty mini-bazaar events for this space on a regular basis. UPDATE: Added a exterior rendering of the new 1 Shot after the jump.

On Monday, our post about the new New Orleans Roast-pouring Mojo Gourmet Coffee in University City garnered some salty response from readers who believed it to be inequitable for the business to set up shop directly next to Drew Crockett's Hub Bub Coffee, which began serving Stumptown coffee near 38th and Spruce in October 2009. We touched base with both Crockett and Mojo's Kimberly Edwards to gain an accurate grip on how these things work — and to gauge how both feel about the strange situation. Let's state this at the outset: These spots are assigned to vendors by the city's Department of Licenses & Inspections (L&I), and are not hand-picked by proprietors. L&I divides Philly into vending "zones," and applicants are required to apply for a Street Sales license within these delineated areas, which feature a finite number of sanctioned spots. Approved vendors provide a list of desired locations within a zone, and spots are assigned based on availability. L&I recently created a new, never-been-occupied vendor spot on the stretch of 38th between Spruce and Locust, and when Mojo's number came up, that's the space they drew. Both trucks put in calls to L&I explaining the situation, and — somewhat surprisingly, considering its reputation with local business owners — the department responded quickly, shifting Mojo to the corner of 38th and Spruce and Hub Bub a few spaces down closer to Locust, near the parking garage entrance on 38th. While Mojo's appearance on the block came as a surprise to Crockett, he's taking it in stride. "Coffee is part of a person's daily routine, and this area's students and faculty and staff are coffee fanatics, so I'm excited to have Mojo in the area," he says. Edwards, who runs Mojo with her husband Guy Angelella, expressed similar sentiments in a statement to Meal Ticket. "We are not interested in stealing anyone's loyal customers, but want to create our own business just like they did and hopefully enjoy a loyal following of our own," she says. "While the situation is not ideal, we've realized that it isn't any different than a half a dozen bars on the same block, serving the same Budweisers, Heinekens and Bass Ales. Something is different about each of those bars and something is different about each of our trucks and menus. We will enjoy the process of discovery as University City finds out why we are different."

well, as the first angered responder, i'll say that's good to hear, though still far from ideal...had mojo been on the other side of campus, it'd be 5 blocks closer to me.

oh well. maybe the next time hub bub is closed, i'll give mojo a try. anything's better than the burnt espresso @ gia.

Founded in October 2008, Meal Ticket is a City Paper blog about food, drink and assorted other things that make you go mmm. We do recipes, interviews, restaurant news, commentary and much more. We don't do restaurant reviews herethose are handled in print, mostly by our critic (and Meal Ticket contributor) Adam Erace. Got a tip, question, thought or concern? Just want to say hello? Please shoot a note to caroline@citypaper.net.
