Omakase, translating loosely as "trust,"  is a Japanese expression oft used in sushi spots to leave the decision-making up to the chef in the form of a series of plates. Morimoto (723 Chestnut St.) will present an omakase to honor spring and the 182nd Annual Philadelphia Flower Show, with dishes showcasing flowers, herbs, and spring ingredients — taking on the show's theme of 2011, "Springtime in Paris."

For $80, Morimoto is lavishing with eight tribute courses. The vibrant menu will highlight Japanese components and precision, but is infused with a little French je ne sais quoi by incorporating panisse (a traditional French chickpea cake) and bouillabaisse. Diners can also look forward to decorative Shikai Maki with "tuna flowers," and a roasted quail with chive blossoms. These dishes live only with the Flower Show, ending this Sunday, March 13. One-year old Argentinian kitchen Hoof + Fin (617 S. Third St.), is debuting a series of fixed-price tasting menus to make tasting your way through their menu easier on the old wallet. Available Sunday through Thursday only, you can choose between three price/course tiers: two courses for $19, three courses for $26 or four courses for $36. (During Sunday brunch, $13 gets you two courses.) By taking advantage of this steal of an offer you'll, try a varied combination of menu items (still TBA, the prix fixes change monthly), such as chicken liver pate with strawberry jam, house-made pappardelle in a braised short rib puttanesca and Arroz a la Gallega, a South American version of paella. Hoof + Fin is BYO, so don't forget your libation of choice! Check out their current a la carte menu after the jump.

Japanese hideaway Maru Global Takoyaki (255 S. 10th St.) is celebrating its first birthday with a new menu for spring. The menu isn't the only thing they're changing up, though — they've gone so far as to expand their okinomoyaki (Japanese pizza) delivery hours to last all day every day, they've tacked on a sandwich selection and expanded their offerings in the grab-and-go section. The Japanese pizza sounds like a flattened version of their signature takoyaki balls — essentially, it's a fluffy crepe with the option of any of the toppings otherwise found inside the takoyaki. On the sandwich front, look out for the Spicy Crunchy Kani Cake ($9.50), a crabcake with spicy mayo, lettuce and pickles; and Chef Ryo's Japanese Chicken ($7.50), for which Ryo Igarashi (above) combines a breaded chicken breast with spicy Japanese mustard, cabbage and talkuan (pickled daikon). Last week (and in the latest What's Cooking!) we told you about the Royal Sushi & Izakaya "pop-up" restaurant scheduled for Monday, Feb. 21 at Khyber Pass Pub (56 S. Second St.). Now we've got a look at the full-on meun for the evening, which goes well beyond the requisite hakata ramen. Check out what chef Todd Dae Kulper has in store after the jump. Thursday was the first official day in biz at Pascual Cancelliere's long-time-coming eatery 943 (943 S. Ninth St.). The BYO experienced its fair share of delays — we first noted the project in Jan. '09; it's been pretty much ready to go since this fall — but now the open kitchen is 100 percent ready/rarin' to go, serving up an interesting mix of traditions from both Italy (Cancelliere's father) and Argentina (Cancelliere's mother). Empanadas (three varieties here) and meat are the queen and king of the Argentine table (see the parrillada juani, a mixed grill of sweetbreads, chorizo, blood sausage, short rib, skirt steak and strip steak), but Cancelliere is also offering plenty of seafood options at the 50-seater (octopus with saffron, fava beans and fennel; a grilled fish a la dia). For right now, 943 is open for lunch and dinner Wednesday to Sunday (Cancelliere is still playing with menu options for brunch service, which'll be served Saturdays and Sundays). That's a pretty fun menu. I used to live 4 blocks from the Eagle from 2004-2007. This was just my favorite place in the 'Yunk, from the cheap food, the beer list (the manager at the time introduced me to Sea Dog Blueberry Wheat-thank you Chris), the Hoegaarden Wednesdays, and the adorable white German shepherd roaming the bar.

After the jump, have a look-see at the official dinner and dessert menus for Opa (1311 Sansom St., 215-545-0170), the new Midtown Village hang we sneak-peeked last week. Chef Andrew Brown (White Dog, Django) so far has us hyped for his grilled octopus (braised for four hours and served with chckpea fondue and chili oil) and his "bifteki" (a feta-stuffed beef burger ... nice!), but the gyro sliders, pastitsio and rabbit are also eye-catching.They'll serve food Monday to Saturday from 5 on. Opa is technically open right now, but brother/sister owners George and Vasiliki Tsiouris are calling this Thursday, Feb. 10, their official Day 1, with a grand opening party coming toward the end of February.

Chef Mark Tropea is mixing it up at his NoLibs BYO Sonata (Liberties Walk, 1030 N. American St.) this month with some wintry additions to his already-symphonic menu. Highlights include a seared scallop app served with mushroom broth agnolotti, plus a new crustaceaous twist on a classic — a buttery lobster pot pie stuffed with edamame, leeks morels and new potatoes. If you're interested for more turf than surf, they've also added grilled veal chops with Brussels sprouts, topped with a caper and golden raisin sauce. As we told you on Monday, the Paesano's location at Ninth and Christian now goes by the name Monsú, as partners Peter McAndrews and Nathan Baynes have converted the sandwich shop into a Sicilian BYOB. (Paesano's has moved down the block to 1017 S. Ninth and will be opening sometime next week.) We stopped by last night and were quickly engulfed by the amazing fam/friends mob scene that ended up with us standing by the service station and sharing sporadically materializing plates of food with friendly strangers (shoutout to bartender Joe from Rembrandt's!). Everything was straight-up delicious, and we even managed to rattle off a few photos, which you can peep after the jump. Here's chef Damien Messina's opening menu (PDF). Though everyone in Philly is freaked about THUNDERSNOW right now, Baynes says they'll run their first official dinner service from 5 to 10 this evening as originally planned. It's actually snowed on the inaugural night of each space he and McAndrews have opened over the past few years — Modo Mio, the original Paesano's, the Italian Market Paesano's, and now this — so they now consider it buona fortuna.

Just tried it today. Really good! Great food, great space, friendly owners. They also have Grab 'n Go prepared dinners for weeknights. East Passyunk 'hood keeps getting better and better.
