The rooftop garden at Noble (2025 Sansom St.), which was but a glimmer in Grace Wicks' eye back in April, is sprouting in full force, so much so that chef Brinn Sinnott has organized a series of "roof-to-table" dinners for the rest of the summer. CP's own Neal Santos recently stopped by to take a peek at the operation for Meal Ticket. So dope that access to the garden is literally a ladder leading up from the kitchen.

(Another Philly boy, Hawk Krall, recently worked with VendrTV, as well, designing their signature wallets.) The truck's trippy vinyl wrap (courtesy of Shira Walinsky) looks good on video. The other day, we tagged along with Gary Dorfman and Sean Stein of Jake's Sandwich Board (122 S. 12th St.) on a fact-finding pig-finding trip to the Italian Market. The big draw at Dorfman's sandwich joint, which opens this coming Monday, May 10, at 11 a.m. (free pork sandwiches for all while they last), will be a whole roasted pig at a carving station greeting folks as they enter for lunch and dinner. The pair decided to partner with Hollywood Meat Market (1039 South Ninth St.), which has been serving South Philly from their tucked-in little butchery off Ninth and Washington for more than 75 years, for their porcine needs. Sean's brother Scott (Red Sky, Pearl) caught the trip, plus a subsequent tasting session, on video. After the jump, check out some additional behind-the-scenes photos we snapped of Hollywood meatmonger Chappy showing off his wares in the walk-in fridge. Dorfman ditched a career with PricewaterhouseCoopers four years back to open Jake's Philadelphia Cheesesteaks at Liberty Place. He closed that stand a week ago to focus on this new venture, which'll serve seven days a week — 10 a.m. to 10 p.m. Sunday to Thursday, and 10 a.m. to midnight Friday and Saturday. Roast pork, which'll be offered from 11 to 2 and 5 to 8 daily, is only one part of the game — they're also doing stuff with pulled pork, fryer-roasted turkey breast, ribeye, brisket, meatballs and more. Have we determined where the Jake's boys came up with the "Haystack" name for the sandwich ingredients served over fries? Did they make it up? It is a tradition somewheres?

I actually ran a contest last year for my customers to come up with a name for a new sandwich. The idea was from a couple that live in Des Moines, Iowa.  They thought the layer of fries reminded them of "Haystacks" they see in Iowa.  I thought it sounded great and decided to use it.

If you read our latest What's Cooking column, you know that Zahav (237 St. James Place) is offering a one-of-a-kind Passover menu (in full after the jump), which'll launch this Monday and run through the following Tuesday, April 6. For $42, chef/co-owner Michael Solomonov will cook eight courses showcasing his modern interpretations of Passover fare. Meal Ticket's Felicia D stopped by the restaurant the other day to learn how to put together Solomonov's leek fritters with charoset, a fruit- and nut-based paste that's a staple of the holiday. (It, like all the elements of the Seder ritual, holds massive symbolic importance at the Passover table.)

I love the idea of leek fritters for Passover.  Only if this is a Sephardic dish, I want to know what it is about the flavors that made him choose a more Ashkenazic style of charoset.  I don't suppose you guys relay questions, do you?

Felicia is quite possibly the cutest girl in all of Philadelphia.
You can see her passion for her job and she looks like she is having a blast.
These videos are very polished. The ones with a well known philly sommelier are bunk. Those producers should take note

I was guilty until recently of the same thing with my last name
I americanized it because no one could pronounce it properly

As to the name, I have no idea what the correct pronunciation is.  Even members of my family put the accent in different places. Perhaps I will get to Naples and Abruzzo one day and learn the truth!

Yes you must go 
Pizza in Naples was the best in my lifetime. 
Very serious and strict rules for pizza there. I think two types of flour (00 and 0) natural water, EVOO, marine salt, peeled tomatoes always in wood burning oven
I think If its not this was they send you to Sicily as punishment or something worse
Funny thing is most of the pizza makers are of turkish descent
If people that think Stella is great only knew the pure magic of real Italian pizza

Definitely didn't peg Anthony Bourdain as a Yo Gabba Gabba! fan, but turns out his daughter loves the show so he is now the coolest dad on the block. Only question: Why is he playing a doctor and not a chef or something otherwise food-related? The prospect of placing one's health in the hands of Bourdain is a terrifying one. Last week, Meal Ticket visited West Philly High to check out its culinary arts program, founded at the beginning of the '09-'10 school year. Run by UPenn's Netter Center for Community Partnerships and funded by the PHMC, the program comprises multiple groups of students, fro varying grade levels, meeting after school to learn culinary fundamentals from Thaddeus Duprey, a Teach for America instructor who's worked in a number of restaurant kitchens locally.

On this particular afternoon, the kids engaged in an Iron Chef-style competition — each team was tasked with coming up with a meal highlighting the "secret" ingredients of hanger steak, baguette, tomatoes and parsley. Michael Solomonov, chef/co-owner of Zahav, and Zahav pastry chef Sarah Corvasce joined us to judge the cook-off. Both plan on getting more involved with the program as it grows.

We got down on some really great food, but the group that brought it home was the threesome of juniors Rahmir Venable, Marie Hines and Jason Rogers. Their perfectly seasoned and grilled steak was killer, but what really stood out to the panel was their French toast dessert, topped with a blackberry sauce made from scratch.

I think it's great that the students have an opportunity to be involved with the culinary arts program. One of my students is in the video and his behavior and academic performance in my class has really improved because his parents told him if it did not he would not be able to participate. Thank Mr Duprey.

For $25, you get four ready-to-cook house-made bacon-wrapped hot dogs, four house-baked buns, and toppings like BBQ onions, sauerkraut, beer mustard and house-cured bread and butter pickles. Ideal for a football game, no? (If only there was a big one coming up ... ) Prensky's also offering his birch beer-glazed wings, with black pepper/buttermilk dressing, for 12 bucks a pound.
