Indie Rock Recipes

You'd think that with all that Bryan Dilworth has on his plate - playing guitar for the Gelcaps, operating his independent label Compulsiv and booking bands at various clubs - he'd hardly have any time to cook for himself. Well, he does love eating at The Onion Pie (a restaurant he's practically turned into his second office), but he's rarely a passive customer. Dilworth often gets behind the stove to make his own lunch and learn a couple of things from the cooks. When he's at home, the local music mogul makes dinner for his wife, Tsunami guitarist Kristin Thompson. "It's tough for me to find things that both me and my wife like because she's vegan," he explains. "I love cheesesteaks." His recipe for chicken and mushroom soup was adapted from one he saw in a vegan cookbook. "It's pretty simple, really good and good for you as well," he explains. The chicken and shrimp are optional. Several notable bands have been lucky enough to benefit from Dilworth's culinary expertise when they passed through town, including Rocket from the Crypt, Tortoise and The Sea and Cake. But life's not all chopping and peeling for the busiest man in Philly indie rock. Compulsiv has just released a new album by Stinking Lizaveta and will soon be putting out a singles compilation of The Photon Band. The Gelcaps are in the midst of recording a new album. There's something always cooking with Dilworth.

Chicken and Mushroom Soup (serves 2-4)

  • 1/4 cup dried shiitake mushrooms (soaked in warm water for 30 minutes)
  • 1/2 cup cooked chicken breast (shredded by hand)
  • 1/4 cup cooked and peeled shrimp
  • 1 quart vegetable stock
  • 6 oz. of bamboo shoots (half of a 12 oz. can, drained)
  • 3 or 4 spinach leaves (cut lengthwise in half)
  • pinch of pepper
  • 1 tbsp rice wine
  • pinch of salt

Bring stock to a boil and add all of the ingredients. Continue to cook for three minutes. Add spinach and cook for one more minute. Eat, sleep, rock.
